It’s a wine full of tannins, a mille-feuille of tannins, but all of them fine and all of them drenched in the scarlet sweetness of jewelled fruit. Fragrant from beginning to end. Alpine strawberries.     Tasting notes

    Colour
    The colour reveals a deep, bright red hue, with purplish highlights typical of its youth that are beginning to show subtle signs of evolution.

    Nose
    Complex and multidimensional, the nose exudes aromas of fresh red fruits such as cherry and raspberry, mingled with notes of liquorice. It then opens up to delicate floral touches reminiscent of peony and summer flowers, complemented by subtle woody and mineral nuances.

    Palate
    The attack is smooth and generous, revealing a juicy texture and a medium body. The mid-palate unfolds with lovely aromatic richness of red and black fruits (morello cherry, wild strawberry), interwoven with notes of sweet spices, thyme and undergrowth. Carried by lovely mineral tension and finely textured tannins, the finish stretches out with elegance and persistence.

    Food and wine pairing

    This French red wine pairs wonderfully with a traditional coq au vin, duck breast with cherries, or white meats in a creamy mushroom sauce. It will also enhance grilled red meats, game, as well as aged cheeses such as Époisses, Comté or Langres.

    Service and storage

    This Beaune 1er Cru "Aux Coucherias" 2023 can continue to age in the cellar and will be fully enjoyable until around 2040.

    The estate

    The story of Domaine Boris Champy began in 1984 when Didier Montchovet founded the estate with half a hectare of vines. A true pioneer in Burgundy, he made the estate the oldest certified biodynamic property in the region. In 2019, Boris Champy took over the reins of the estate. Now at the helm of a vineyard of around 12 hectares, he continues this ecological philosophy by incorporating agroecology and making the most of high-altitude terroirs to meet climatic challenges, establishing the estate as one of the region's benchmarks.

    The vineyard

    The Beaune 1er Cru "Aux Coucherias" comes from a plot of around one hectare, located on the steep slopes to the south of the appellation. Facing south-west, the vines, aged between 60 and 75 years, benefit from optimal sunshine late in the day. The terroir is distinguished by clay-limestone soils rich in red clay, part of which lies over a former limestone quarry, giving the wine an intense minerality. The plot is a true haven of biodiversity, surrounded by hedgerows and broom.

    The vintage

    The year 2023 was marked by unusual weather conditions, notably an unprecedented heatwave in September, right in the middle of the harvest period. To preserve the freshness and natural acidity of the berries, harvesting was brought forward and carried out just before this heatwave, between 7 and 9 September.

    Winemaking and aging

    The winemaking of the Beaune 1er Cru "Aux Coucherias" 2023 incorporates 65% whole bunches, with moderate extraction and rigorous sorting of the berries. Pressing is carried out vertically to respect the marc. The wine is then aged in oak barrels (50% new wood from forests on granite soils) for an average of 15 months.
