Tasting Notes
Appearance
The wine reveals a pale yellow hue with greenish highlights, bright and endowed with a light viscosity.
Nose
The nose reveals aromas of white flowers and citrus fruits such as lemon, accompanied by notes of green apple. A mineral and maritime dimension comes through with touches of crushed stone and sea spray.
Palate
On the palate, the wine shows a lovely acidic tension and a fine texture. The subtly creamy mouthfeel, brought about by the ageing process, balances an austere, saline minerality. The finish is long, marked by iodine-like nuances and lemon zest.
Food and Wine Pairing
This white wine pairs beautifully with raw shellfish such as oysters, seafood or a ceviche. It also goes very well with grilled white fish as well as fresh or lightly matured goat cheeses.
Serving and Cellaring
The "Briords" 2025 cuvée can be enjoyed after a few years of cellaring and will continue to evolve favourably until around 2033.
A Great White Wine from the Loire by Domaine de la Pépière
The Estate
Founded in 1984 by Marc Ollivier, Domaine de la Pépière is located in Maisdon-sur-Sèvre, in the Pays Nantais, at the heart of the Loire valley, in France. The vineyard, which today spans over 40 hectares, has grown through the acquisition of carefully selected plots on high-quality terroirs. Currently led by Rémi Branger and Gwénaëlle Croix, the estate stands out for its early commitment to environmentally responsible viticulture. The domaine showcases the true expression of its soils through certified organic and biodynamic practices, producing wines of precise terroir character.
The Vineyard
Made under the Muscadet Sèvre et Maine sur Lie appellation, this cuvée comes from the Clos des Briords vineyard site. This three-hectare plot consists of very old vines planted between 1930 and 1950, propagated through massal selection. They thrive on a subsoil of Château-Thébaud granite, rich in feldspar and clay. This well-draining terroir, made up of sand, gravel and clay, allows for deep root growth. All of these vines are farmed according to certified organic and biodynamic principles.
Winemaking and Ageing
The grapes for the "Briords" 2025 cuvée are harvested by hand. The bunches are carefully transported and then pressed directly and gently in a pneumatic press filled by gravity, without prior crushing. After natural settling, fermentation begins spontaneously through indigenous yeasts, with no chaptalisation whatsoever. The wine is then aged on its lees for eight to nine months in large underground vats, without racking. Bottling takes place without fining or filtration in order to preserve the wine's purity.
