    Tasting Notes

    Appearance
    The colour reveals a bright pale yellow, enhanced by subtle golden highlights and slight green tints typical of this white wine.

    Nose
    Delicate and expressive, the nose exudes aromas of fresh citrus fruit, mingled with notes of white flowers and green apple. An intensely mineral dimension, reminiscent of wet stone, elevates this bouquet.

    Palate
    The attack is lively, energetic and mouth-watering. The mid-palate offers a smooth, generous and gourmet texture, perfectly balanced by a tangy tension. The finish is straight and persistent, unfolding into a pronounced salinity and a delicate bitterness.

    Food and Wine Pairing

    This wine pairs wonderfully with seafood, such as a platter of oysters, shellfish or grilled white fish. It also pairs beautifully with fresh goat's cheeses as well as dishes seasoned with mild spices.

    Serving and Ageing

    For optimal tasting, it is recommended to serve this wine at a temperature between 10 and 12°C. A brief aeration may benefit it in its youth. This 2025 vintage will continue to develop complexity in the cellar and can be enjoyed until around 2033.

    The Tension and Minerality of a Terroir-Driven Muscadet

    The Estate

    Founded in 1984 by Marc Ollivier, Domaine de la Pépière is located in Maisdon-sur-Sèvre, in the heart of the Loire Valley, in France. A pioneer in showcasing terroirs, this 42-hectare estate is now run by Rémi Branger and Gwénaëlle Croix. Committed to an approach respectful of living ecosystems, the estate is certified organic and biodynamic. Domaine de la Pépière stands out for its production of precise, saline wines, becoming an essential reference point in the Nantes vineyards.

    The Vineyard

    This cuvée comes from a plot of around 1.7 hectares located within the Muscadet Sèvre et Maine sur Lie appellation. The old vines thrive on a south-facing slope overlooking the Maine river. The terroir stands out for its deep clay-siliceous soils resting on a subsoil of two-mica gneiss schist, enriched with amphibolites. This unique geology allows for deep rooting, giving the grapes a fine concentration.

    Winemaking and Ageing

    The 2025 "Gras Moutons" grapes are harvested by hand. The berries are carefully transported before undergoing pneumatic, gravity-fed pressing, without crushing. After light settling, fermentation begins spontaneously thanks to indigenous yeasts in underground tanks, lasting one to two months. Ageing continues on fine lees for around eight months, with occasional lees stirring, before light filtration at bottling.
