This cuvée is ideally suited to furred game such as roe deer, wild boar or hare, as well as prime red meats with a melt-in-the-mouth texture. It also pairs beautifully with mature, full-flavoured cheeses typical of Burgundy.

The Estate
Domaine des Perdrix was taken over by the Devillard family in 1996 and is now run by Amaury and Aurore Devillard. Located in Prémeaux-Prissey, in the heart of the Côte de Nuits in Burgundy, the estate covers approximately 15 hectares. It holds a quasi-monopoly on the Premier Cru Nuits-Saint-Georges Aux Perdrix, from which it takes its name, complemented by a parcel in the Echezeaux Grand Cru appellation, one of the most sought-after terroirs in the region.
The Vineyard
The estate's Echezeaux Grand Cru parcel is divided between the Echezeaux du Dessus climat, regarded as the qualitative heart of the appellation and planted in 1922, and the Quartiers de Nuits sector, planted in 1945. The vines, facing south/southeast on a gentle slope, are rooted in clay-limestone soils with a predominance of clay, scattered with small pebbles. Cultivated in the Burgundian tradition of high planting density, they have been farmed organically since 2024 and are harvested exclusively by hand.
Winemaking and Ageing
For this Echezeaux Grand Cru 2025, the estate applies its traditional Burgundian winemaking, using a rigorously sorted hand-harvested crop. This vintage is currently still ageing at the estate.
