Tasting
Appearance
The wine displays an elegant pale gold hue, enhanced by brilliant silver highlights.
Nose
Remarkably pure, the nose releases delicate aromas of white flowers and white-fleshed fruit such as pear, harmoniously complemented by subtle hints of fresh almond.
Palate
Beautifully balancing freshness and roundness, the palate charms with its silky texture. The wine stretches out elegantly towards a long finish, marked by a lovely saline tension.
Food and wine pairing
This gastronomic white wine pairs perfectly with refined starters such as artichokes with vinaigrette or goat's cheese with almonds. It is also an excellent match for poultry dishes, fish such as sardines escabeche, aged sheep's milk cheeses and lightly sweetened fruit desserts.

The estate
Founded around 1120–1130 by Cistercian monks, Domaine du Cellier aux Moines is one of the oldest vineyards in Burgundy. Located in Givry, this historic estate has undergone a true renaissance since it was acquired in 2004 by its current owners, Philippe and Catherine Pascal. With 12 hectares of biodynamically farmed vines, the estate stands out for its cellar, listed as a Historic Monument, and its state-of-the-art gravity-flow winery. Combining centuries-old heritage with high-precision viticulture, the Pascal family crafts wines renowned for their finesse and the authentic expression of their terroirs.
The vineyard
This cuvée comes from the "Les Combes" climat, a 70-are plot within the Montagny appellation. Planted in 2012, these vines thrive on a due south-facing slope at an altitude of between 270 and 310 metres. This distinctive terroir consists of clay-limestone soils strewn with oolitic stones, which ensure excellent drainage and give the wine a mineral dimension. The entire vineyard is carefully farmed according to biodynamic principles and has been certified organic since 2020 and Biodyvin since 2023.
Vinification and ageing
The making of the Montagny 1er cru "Les Combes" 2021 begins with a meticulous hand harvest. The grapes are then gently pressed to preserve the full purity of the juice. Thanks to a gravity-flow winery built on four levels, mechanical intervention is kept to a minimum. Fermentation takes place in oak barrels, followed by careful ageing on fine lees for twelve months, giving the wine its silky texture and aromatic complexity.
