    The Refinement and Structure of a Red Wine from the Côte de Beaune

    The Estate

    The Domaine du Château de Meursault is a Burgundy wine estate located in the Côte de Beaune, whose modern configuration dates back to 1973, when André Boisseaux took over the entire estate and restructured it. Since December 2012, the property has belonged to the Halley family, under the leadership of Olivier Halley. The vineyard now extends over 67 hectares, all of them farmed organically. This foothold in the Côte de Beaune, combined with this environmental commitment, places the estate among the region's notable properties.

    The Vineyard

    This cuvée comes from the Savigny-Lès-Beaune appellation, a village in the northern part of the Côte de Beaune. The Pinot Noir vines used for this cuvée are planted on upper-slope parcels, on brown, stony, poor soils that are particularly well suited to this grape variety. The entire Domaine du Château de Meursault vineyard, from which this Savigny-Lès-Beaune Village originates, is farmed organically, with careful attention paid to preserving soil life and the biodiversity of the parcels.

    Vinification and Ageing

    The 2025 Savigny-Lès-Beaune Village is still ageing, as the estate has not yet communicated its final bottling conditions. In keeping with the vinification approach the estate applies to its red wines, the grapes are harvested by hand and then sorted before undergoing a cold pre-fermentation maceration lasting several days. The alcoholic fermentation, carried out gently and steadily, favours pumping over rather than punching down in order to extract high-quality tannins without excessive astringency, followed by a long maceration of 16 to 20 days and then barrelling in oak casks for ageing.
