Tasting
Color
Clear and bright, the color reveals a beautiful ruby red hue with luminous intensity.
Nose
The bouquet opens with aromas of fresh red and black fruits such as cherry, raspberry and blackberry coulis, enhanced by floral notes of violet and subtle touches of garrigue. With aeration, nuances of licorice, cocoa, camphor and sweet spices reveal themselves with elegance.
Palate
The attack offers a beautiful volume combining density and lightness. The mid-palate seduces with its silky texture, remarkably fine tannins and a vibrant freshness. The long, persistent finish expresses delicate mineral and lightly smoky notes.
Food and wine pairing
This Red wine from France pairs beautifully with a bull gardiane accompanied by fresh tagliatelle, roasted poultry such as pigeon or quail, as well as mushroom-based dishes. It will also elevate goat cheeses or semi-hard cow's milk cheeses.
Service and storage
The Aimer, Rêver, Prier, Se Taire 2024 cuvée can be enjoyed starting in 2026 and will reveal its full potential until around 2034, with an aging capacity that can extend beyond 2036 for lovers of older vintages.
The elegance of a bold Pinot Noir at the heart of Roussillon
The estate
Officially founded in 1998 by Hervé Bizeul and his wife Claudine, the Domaine du Clos des Fées is located in Vingrau, in the Roussillon region. A former sommelier, the current owner, Hervé Bizeul, started out with old vines and rudimentary means. Today, the estate spans a vineyard of approximately thirty hectares and is recognized worldwide for its innovative approach. By pushing the boundaries of local traditions, the estate has significantly contributed to the qualitative revival of wines from this terroir, offering cuvées with poetic names and unique personalities.
The vineyard
Part of the IGP Côtes Catalanes appellation, this cuvée comes exclusively from the Cabrils plot, located in the commune of Tautavel. This singular terroir stands out for its steep, north-facing slope and deep soils composed of red and black clays over a limestone bedrock. These geological and microclimatic conditions provide an ideal environment for growing northern grape varieties in this Mediterranean region, ensuring excellent preservation of acidity and consistent hydration for the vines.
The vintage
The year 2024 offered particularly favorable climatic conditions, allowing for an optimal balance to be achieved. The growing cycle unfolded under the best auspices, promoting excellent phenolic ripeness of the berries while preserving a beautiful natural freshness. The manual harvest took place early, between mid-August and the end of August, in order to capture the acidity essential to the wine's structure.
Winemaking and aging
The creation of the Aimer, Rêver, Prier, Se Taire 2024 begins with a cold pre-fermentation maceration to extract color and aromas. Fermentation is then triggered naturally through indigenous yeasts. Measured punch-downs and pump-overs are carried out very gently to avoid excessive extraction. The wine is then aged for eight to ten months in Burgundy oak barrels, combining new wood and once-used barrels. A light filtration is carried out before bottling.
