    Tasting

    Color

    The color displays a deep ruby red hue with garnet highlights when held up to the light.

    Nose

    The nose reveals aromas of small black fruits such as black cherry, blackberry and dark plum, accompanied by sweet spice notes reminiscent of cinnamon and clove. Floral nuances of dried violet and rose petals complete this complex bouquet.

    Palate

    On the palate, the wine shows remarkable intensity with flavors of concentrated black fruit, supported by bright acidity and a fine-grained tannic structure. Its creamy texture creates a silky, enveloping sensation. The whole combines masculine power with striking finesse. The long, persistent finish gradually develops toward mineral, herbal and earthy sensations.

    Food and wine pairings

    This Nuits-Saint-Georges 1er cru "Aux Chaignots" 2021 pairs ideally with generous red meat preparations such as roast beef or lamb shoulder. It also goes beautifully with game such as venison and duck, as well as aged hard cheeses.

    Serving and cellaring

    It is recommended to serve the Nuits-Saint-Georges 1er cru "Aux Chaignots" 2021 at a temperature of 15-16°C. Decanting for thirty to sixty minutes before serving will allow the wine to fully express its aromatic potential. This wine can be enjoyed until around 2031.

    A powerful Nuits-Saint-Georges premier cru with mineral finesse

    The estate

    Founded in 1825 by Pierre Faiveley, Domaine Faiveley is among the most important estates in Burgundy, with around 120 hectares of vines spread across the region’s most prestigious appellations. Now run by Erwan and Eve Faiveley, representatives of the seventh generation, the estate stands out for its environmental commitment, having obtained organic certification in July 2025, coinciding with the property’s bicentennial. The Faiveley family also played a major historical role by co-founding the Confrérie des Chevaliers du Tastevin in 1934. The estate is renowned for wines that express the Burgundian climats with purity and elegance.

    The vineyard

    The climat "Aux Chaignots" covers around 0.73 hectare, located mid-slope in the northern part of the hillside of Nuits-Saint-Georges. The name comes from Old French "Chasne" meaning oak, reflecting the historical presence of oak forests. The soils are made up of brown limestone and gravel from the erosion of the limestone plateau. The east-facing exposure provides optimal morning sunshine, while afternoon cloud cover moderates temperatures. Vines planted in 1927, 1965 and 2019 bring complexity and depth to the expression of the terroir.

    The vintage

    The 2021 vintage ranks among the most challenging in Burgundy, marked by a devastating frost in early April that significantly reduced yields across the region. Despite these trying conditions, the grapes that survived showed remarkable concentration and a precise expression of terroir. Harvest took place at the end of September under favorable conditions, making it possible to pick fruit of exceptional quality despite the low volumes.

    Vinification and aging

    Harvest for the Nuits-Saint-Georges 1er cru "Aux Chaignots" 2021 began on September 27 with hand-picking into small crates. After a double sorting in the vineyard and then on the sorting table, the grapes were fully destemmed without crushing. Whole berries were transferred by gravity into the fermentation vats. Maceration lasted seventeen days, including four days of cold soak at 12°C, followed by fermentation with indigenous yeasts and a post-fermentation maceration. Three punch-downs were carried out during the process. Aging took place over twelve months in French oak barrels with a long, gentle toast, on fine lees without racking. Bottling by gravity took place in October 2022, after light lenticular filtration, without fining.
