    Tasting

    Colour
    The colour reveals a delicate pale lemon-yellow hue, enhanced by subtle green highlights typical of young white wines from the region.

    Nose
    The nose opens with great finesse on aromas of white flowers and fresh almond. With aeration, the bouquet gains in complexity, revealing notes of dried fruit, subtle toasted touches as well as vegetal and mineral nuances.

    Palate
    The palate stands out for its airy profile and remarkable elegance. It offers an energetic structure carried by a saline minerality and flavours of citrus zest. The balance is perfect between the richness of the mid-palate and a vibrant freshness, leading to a lively finish.

    Food and Wine Pairing
    This great white wine pairs beautifully with refined dishes such as shellfish, firm-fleshed fish like monkfish, or poultry served with a creamy mushroom sauce. It will also pair wonderfully with subtly matured cheeses.

    Service and Storage
    This Bâtard-Montrachet 2023 can be enjoyed after a few years in the cellar, with an optimal tasting window recommended between 2026 and 2035 or so, although its structure will allow it to evolve well beyond that.

    The Estate
    Founded in 1885, Domaine Henri Boillot is a true institution in Burgundy. Based in Meursault, the estate spans a vineyard of 15 to 19 hectares spread across prestigious terroirs. Today, it is Guillaume Boillot who heads the estate, carrying on the family legacy following the passing of his father, Henri. The estate stands out for its "ultra-considered" viticultural approach, initiated back in the 1990s, aimed at limiting interventions to let the purest authenticity of the terroirs express itself.

    The Vineyard
    The estate's Bâtard-Montrachet plot, covering approximately 0.32 hectares, enjoys an exceptional position on the border between Puligny-Montrachet and Chassagne-Montrachet. South-east facing, at an altitude of 240 to 250 metres, the vines flourish on brown limestone soils rich in clay. The estate applies a high planting density of 10,000 vines per hectare to control vine vigour and encourage deep rooting, thereby enhancing the terroir's mineral expression.

    The Vintage
    The year 2023 was marked by particularly hot weather conditions, making it one of the warmest vintages on record in the region. The growing cycle had to contend with significant water stress as well as strong fungal disease pressure. Despite these challenges, the harvest proved generous. Picking began exceptionally early, on 27 August, allowing grapes to be harvested at optimal phenolic ripeness.

    Winemaking and Aging
    The hand-harvested grapes undergo rigorous sorting. To preserve the freshness and purity of this Bâtard-Montrachet 2023, the estate chooses to forgo the practice of lees stirring. Ageing takes place over a period of ten to twelve months in 350-litre oak barrels, 25% of which are new, a specific format chosen to moderate the wood's impact. The wine is then delicately fined with minimal filtration before bottling.
