    Tasting

    Colour
    The colour reveals a golden hue, both pale and luminous.

    Nose
    The nose opens with aromas of fresh white fruits such as apple and pear, enhanced by floral touches. Delicate notes of butter, hazelnut and herbs intertwine with a deeply mineral backbone.

    Palate
    The palate offers beautiful volume and a full texture, carried by fine tension and mineral structure. The balance between the fruit and a subtle oakiness is perfect, leading to a long finish marked by saline notes.

    Food and Wine Pairing

    This white wine pairs wonderfully with fine fish (sole meunière, turbot), shellfish such as scallops or lobster, as well as poultry served with a cream or mushroom sauce.

    The Elegance and Mineral Precision of a White Burgundy Wine

    The Estate

    The history of Domaine Henri Boillot began in 1885 with the family's first winegrowing ventures in Burgundy. Located in Meursault, the estate developed over the decades before being unified under its current name in 2005. Today, Henri Boillot runs the estate and vinifies the white wines, while his son Guillaume has managed the vineyard and the red wines since 2021. Recognised for its environmentally responsible approach, free of chemical weedkillers, and its limited yields, the estate produces wines of great purity that remain true to their terroirs.

    The Vineyard

    This wine comes from several plots (Les Petits Charrons, Chevalières, Casse Têtes, Luraule and Les Pelles) covering around 1.5 hectares within the Meursault appellation. Ideally located on the mid-slope, the vines thrive on soils composed of brown limestone earth and clay-limestone marl bands. The estate favours mechanical soil work and late manual harvesting to ensure optimal ripeness.

    The Vintage

    The year 2024 was marked by unpredictable weather. The unstable and rainy spring led to strong mildew pressure and disrupted the vine's development. In early June, episodes of rain during flowering caused coulure, considerably reducing harvest yields.

    Winemaking and Aging

    The creation of this Meursault Village 2024 is based on a philosophy of minimal intervention. The white grapes are whole-cluster pressed. In order to preserve the purity of the fruit and the tension of the wine, the estate chooses not to carry out any lees stirring. Aging takes place with moderate use of oak, contributing subtle notes without masking the identity of the terroir.
