    Tasting

    Colour
    The colour reveals a luminous pale gold hue with subtle green highlights, distinguished by remarkable clarity.

    Nose
    The bouquet opens with aromas of white flowers such as acacia and honeysuckle, mingled with notes of fresh citrus fruits such as lemon and grapefruit. Aeration reveals hints of dried almond, almond paste and hazelnut, complemented by fine herbal nuances.

    Palate
    The attack is generous, offering flavours of white and yellow-fleshed fruits such as pear, apple and mirabelle plum. The mid-palate is underpinned by a precise mineral tension, reminiscent of fresh stone, before extending into a persistent finish with accents of toasted almond and citrus.

    Food and wine pairing

    This white wine pairs perfectly with seafood and fine fish, such as poached lobster, sole meunière or salt-crusted sea bass. It also pairs very well with poultry in cream and mushroom sauces, as well as with matured cheeses such as Comté, Beaufort or Époisses.

    Service and storage

    For an optimal tasting experience of the Meursault 1er Cru "Les Poruzots" 2023, it is recommended to serve it at a temperature between 12 and 13°C, ideally in Burgundy-style glasses. This wine can be enjoyed in its youth but will continue to evolve favourably, with a drinking window extending to around 2034.

    The estate

    Founded in 1885, Domaine Henri Boillot is a historic figure in Burgundy, located in the Côte de Beaune. Now run by Henri Boillot, the estate spans around fifteen hectares across recognised appellations. The domaine stands out for its sustainable farming philosophy, favouring controlled yields and minimal intervention both in the vineyard and in the cellar, in order to faithfully express the identity of each plot.

    The vineyard

    The Meursault 1er Cru "Les Poruzots" 2023 comes from a south-facing plot, whose name evokes a stony place. The vines, around thirty-five years old, thrive on soil composed of Middle Jurassic limestone, marl and a layer of brown loam. Vineyard management aims for limited yields, with hand-harvesting to ensure optimal ripeness.

    The vintage

    The year 2023 was marked by complex weather conditions, with record heat episodes, significant water stress during the growing cycle and considerable disease pressure. Despite these challenges, rigorous management resulted in berries with a fine balance between ripeness and acidity.

    Winemaking and aging

    For the Meursault 1er Cru "Les Poruzots" 2023, whole bunches are gently pressed, followed by cold settling. Fermentation takes place in 350-litre oak barrels, with no lees stirring. The wine is then aged for around twelve months in barrels, half of which are new oak and half of which have previously held one wine.
