    Food and wine pairings

    This red wine is particularly enjoyable as an aperitif. It pairs beautifully with mixed salads, charcuterie boards, white meats or fish. It also goes very well with light dishes typical of Mediterranean cuisine and with summer barbecues.

    Serving and cellaring

    For the best tasting experience, serve Amalgame 2025 slightly chilled, at a temperature between 12 and 16°C. Decanting is not necessary. Crafted for immediate enjoyment, this wine shows all its freshness in its youth.

    Other characteristics

    This wine is not filtered before bottling, so a light natural deposit may be present, which in no way affects its quality. It is certified organic.

    The estate

    Located in Trausse-Minervois in the Languedoc, Domaine Jean-Baptiste Senat was officially founded in 1996. Now run by Jean-Baptiste and Charlotte Sénat, this family estate quickly established itself as one of the region's leading names. A pioneer in its approach, the estate has been certified organic since 2005. The owners' philosophy is built on an artisanal, natural vision of winegrowing, favouring minimal intervention in the cellar and complete transparency. Domaine Jean-Baptiste Senat stands out for its commitment to producing fresh, easy-drinking wines that are deeply rooted in their Mediterranean terroir.

    The vineyard

    Amalgame 2025 is an IGP Aude wine made from plots located on the foothills of the Montagne Noire. The vines thrive on clay-limestone soils dotted with siliceous lenses and benefit from a breezy climate that preserves the freshness of the berries. The vineyard is bush-trained (gobelet), a traditional pruning method that protects the grapes from the intense summer heat. Yields are kept to around 40 hl/ha. The grape varieties are co-planted, with Grenache Noir vines around thirty years old, Grenache Gris of about ten years, and young six-year-old vines for the other varieties.

    Winemaking and ageing

    The grapes for Amalgame 2025 are harvested by hand. Vinification is carried out with whole bunches and a short maceration of around ten days, bringing out freshness and fruit. Fermentations start spontaneously with indigenous yeasts, without any oenological additives. The wine is aged exclusively in vats, with no time in wood, to preserve its aromatic purity. It is then bottled at the estate without fining or filtration.
