Tasting notes
Colour
Tinged with deep ruby turning to purple, the colour has a brilliance that hints at a wine of character.
Nose
The nose opens with ripe black fruit aromas, supported by notes of garrigue and sweet spices, at times lifted by floral nuances.
Palate
The palate is full and generous, carried by fine tannins and a lively freshness that makes it remarkably easy to drink.
Food and wine pairing
This Minervois will pair beautifully with grilled or roasted meats seasoned with herbes de Provence, slow-cooked dishes from the South of France such as cassoulet or beef daube, as well as stuffed vegetables or full-flavoured cheeses.
Serving and cellaring
This Ornicar 2025 is ideally enjoyed slightly chilled, at around 16 to 18°C (61 to 64°F), to bring out the full freshness of its fruit. This vintage can be kept for a few years in the cellar, although it is already a real pleasure to drink in its youth.
A red Minervois with generous fruit, between garrigue and freshness
The estate
Domaine Jean-Baptiste Senat was founded in 1996 in Trausse-Minervois, in the Languedoc, when Jean-Baptiste and Charlotte Senat took over the family land to develop organic and natural viticulture. Now run by the couple, with Jean-Baptiste in charge of the vineyard and cellar and Charlotte overseeing administration and sales, the estate has become known for its lively, honest wines, made from old vines tended with minimal intervention, which have contributed greatly to the qualitative reputation of Minervois.
The vineyard
The grapes for this cuvée come from plots on the slopes of the Minervois, on the edge of the Montagne Noire, on clay-limestone soils. The vines, including many old Grenache vines, are trained as bush vines (gobelet) following organic farming principles, without any chemical inputs, and are harvested by hand to preserve the quality and balance of the grapes.
Vinification and ageing
Ornicar 2025 is made following the cuvée's usual method: whole-bunch vinification, followed by a short maceration of about twelve days that encourages a gentle extraction of tannins. Fermentations take place with indigenous yeasts, without oenological additives, and the wine is then aged mainly in tank to preserve the purity of the fruit before being bottled at the estate.
Grape varieties
This cuvée is made from a blend of Grenache and Carignan, two emblematic grape varieties of the Languedoc that give this Minervois its structure and generous fruit.
