Characteristics and Tasting Notes of Mas la Chevalière "Pinot Noir" 2025 from Domaine Laroche
Tasting Notes
Appearance
This red wine reveals a bright hue with a beautiful, brilliant ruby colour of medium intensity.
Nose
The aromatic bouquet opens with luscious notes of ripe red berries, such as strawberry and cherry. These are occasionally underscored by subtle hints of black fruit and delicate spicy nuances.
Palate
The palate offers a delicate, particularly juicy texture, carried by supple, velvety tannins. The whole is perfectly balanced, combining a pleasant freshness with a clean, approachable fruity expression.
Food and Wine Pairing
This cuvée pairs harmoniously with roasted white meats, such as guinea fowl or chicken, as well as with fine cold cuts. It also works very well with grilled oily fish, vegetarian mushroom dishes, or medium-strength pressed cheeses.
Serving and Cellaring
Mas la Chevalière "Pinot Noir" 2025 is a wine designed to be enjoyed young, so as to fully appreciate its fruity profile and freshness, while still having the structure needed to age for a few years in the cellar.
The Elegance and Freshness of a Pinot Noir in Vin de France
The Estate
Founded in 1850 by Jean-Victor Laroche, Domaine Laroche is a historic figure in Chablis, with roots dating back to the ancient Obédiencerie of the 9th century. Now owned by the AdVini group, the estate spans around 90 hectares in Burgundy and also explores the terroirs of the Languedoc with 30 hectares dedicated to Burgundian grape varieties. A pioneer of the screw cap and strongly committed to agro-ecology, the producer combines tradition and modernity. It stands out for its environmental certifications, reflecting a deep respect for biodiversity and soil health.
The Vineyard
The grapes behind this Vin de France come from winegrowing partners located on high-altitude terroirs. This southern vineyard, farmed organically, is split between the foothills of the Cévennes and the Limoux area. The vines, around twenty years old, thrive on predominantly clay-limestone soils. These cooler areas, swept by maritime winds, allow the grape variety to maintain a fine balance despite the Mediterranean climate.
Winemaking and Ageing
The making of Mas la Chevalière "Pinot Noir" 2025 aims above all to preserve the brightness and purity of the fruit. Vinification is carried out with moderate extraction to achieve tannins of great finesse. Ageing takes place exclusively in vats, with no oak influence whatsoever, in order to preserve the characteristic aromatic freshness of this cuvée.
