    Nose
    The aromatic bouquet is particularly expressive, releasing scents of red and black fruits such as cherry, cranberry and raspberry. These fruity notes intertwine with hints of undergrowth, evoking mushroom and damp leaves, all enhanced by delicate spicy nuances.

    Palate
    The palate offers a fine balance between the fruit and the subtle contributions of oak ageing. The attack is smooth, supported by soft, perfectly integrated tannins that give the wine a silky texture. A lovely freshness accompanies the tasting through to a long, pleasant finish.

    Food and wine pairing
    This wine pairs wonderfully with roasted poultry, such as chicken or duck, as well as with earthy dishes featuring mushrooms or truffles. It also goes very well with charcuterie platters, terrines, or game meats such as wild boar, venison or pheasant.

    Service and storage
    The Bourgogne Pinot Noir "Les Grandes Carelles" 2023 has supple tannins that make it very approachable in its youth, while possessing the complexity and structure needed to age favourably in the cellar.

    This wine has an alcohol content of 12.5%. Crafted with a minimal-intervention approach, it is neither fined nor filtered, which may lead to the formation of a slight natural sediment over time.

    The estate
    The winemaking history of Domaine Lejeune dates back to 1783, although the family formally settled into its current buildings in Pommard in 1793. Located in the heart of Burgundy, this historic 8.7-hectare estate is now run by Louis de Belleroche, who succeeded the Jullien de Pommerol family in 2024. Certified organic and biodynamic, the estate stands out for its deep respect for tradition, notably housing the oldest wooden vat still in use in the region. It is renowned for its whole-cluster winemaking and its environmental commitment.

    The vineyard
    This cuvée comes from a 0.85-hectare plot located in the village of Pommard, within the Bourgogne appellation. Although this clay-limestone terroir has the qualities required for a premier cru classification, the estate has chosen a regional classification to ensure complete transparency. The vines, planted in 1937, are cultivated according to the principles of biodynamics and organic farming. Vineyard management favours minimal intervention, with natural grass cover, goblet pruning and very low yields, ensuring optimal concentration in the hand-harvested grapes.

    Winemaking and ageing
    The production of the Bourgogne Pinot Noir "Les Grandes Carelles" 2023 relies on the traditional technique of whole-cluster fermentation. After a light foot-treading, fermentation begins naturally thanks to indigenous yeasts. Once malolactic fermentation is complete, the wine is aged for twelve to fourteen months in 228-litre oak barrels, with a minimal proportion of 5% new oak to preserve the brightness of the fruit. The wine is racked twice, then hand-bottled, without any fining or filtration.
