Description
Characteristics and tasting tips for "La Voûte Saint Vincent" 2025 from Domaine Louis Claude Desvignes
Tasting
Colour
The wine displays a lovely ruby-red hue, brightened by subtle violet highlights that reflect its youth.
Nose
The aromatic bouquet opens with luscious notes of fresh red fruit, led by cherry, alongside sloe. It then gains delicate floral touches of violet, closely intertwined with hints of blue fruit.
Palate
Medium-bodied, the palate offers a particularly juicy texture, supported by a pleasant, tangy freshness. The fine yet grainy tannins give the wine an elegant structure and carry it through to a linear, lingering finish.
Food and wine pairings
This red wine is a wonderful match for flavourful, convivial dishes such as salt-crusted chicken, veal blanquette or osso buco. It also pairs beautifully with a gizzard salad, fondue bourguignonne, fine charcuterie and traditional bistro fare.
Serving and cellaring
To fully appreciate "La Voûte Saint Vincent" 2025, open it thirty minutes to an hour before serving. While it is very approachable in its youth, allowing you to enjoy its vibrant fruit, it also has the structure to develop well in the cellar for four to six years, until around 2031.
The authentic expression of a Morgon terroir by Domaine Louis Claude Desvignes
The estate
Located in Villié-Morgon, in the heart of Beaujolais, Domaine Louis Claude Desvignes is a historic family estate whose winegrowing lineage dates back to 1712. Today, the eighth generation, represented by siblings Claude-Emmanuelle and Louis-Benoît Desvignes, runs the property. True to their father's vision, they uphold an artisanal philosophy, rejecting oenological artifice in favour of the pure expression of terroir. Certified organic, this benchmark estate is renowned for its structured, deep wines that faithfully reflect their appellation.
The vineyard
The grapes for this cuvée come exclusively from the Douby climat, located in the northern part of the Morgon appellation, close to the Fleurie and Chiroubles crus. This terroir of around five hectares is characterised by decomposed granite soils that are sandy on the surface and offer excellent drainage. The vines, around 45 years old, are farmed with the utmost respect for the environment. The soils are regularly ploughed to encourage microbial life, and all vineyard work, including the harvest, is carried out by hand.
Winemaking and ageing
"La Voûte Saint Vincent" 2025 is crafted using traditional methods. After hand-harvesting, fermentation takes place with indigenous yeasts and includes around 50% whole bunches. Maceration lasts nine to twelve days on average, gently extracting the fruit's substance. The wine is then aged exclusively in concrete vats for seven to ten months, a technique chosen to preserve the brightness of the fruit and the transparency of the terroir, without any oak influence.
