    Tasting

    Colour
    Revealing a deep red colour, this wine displays intense, almost black hues.

    Nose
    Beautifully complex, the bouquet exudes aromas of red and black fruits, enhanced by soft spicy notes and a subtle mineral touch.

    Palate
    Full-bodied and elegant, the palate seduces with its silky texture and remarkably refined tannins. The fruity expression unfolds harmoniously towards a fresh finish, underscored by a beautiful minerality.

    Food and wine pairing

    This red wine pairs wonderfully with cassoulet, confit lamb shoulder, veal sweetbreads with morels, or poultry dishes such as poule au pot. It will also enhance mushroom-based dishes, such as porcini mushrooms.

    Service and storage

    For optimal enjoyment, it is recommended to decant this wine for about an hour and serve it at a temperature between 13 and 14°C. This wine can be cellared until around 2038.

    The pure and mineral expression of a great Loire Valley wine

    The estate

    Officially founded in 1985 in Cravant-les-Coteaux, Domaine Philippe Alliet is a key reference in the Loire Valley. While the vineyard's heritage dates back to 1978, it is thanks to the tireless work of Philippe and his wife Claude that the estate has earned its renown. Today, their son Pierre Jacques Marcel Alliet actively participates in managing this family property. Known for its discretion and demanding standards, the estate stands out for its rigorous yield control, giving rise to precise cuvées that showcase the true expression of their terroir.

    The vineyard

    Spanning 17 to 18 hectares, the vineyard is spread across the communes of Cravant-les-Coteaux and Chinon. The vines, aged between 40 and 70 years, are cultivated according to the principles of sustainable farming, with particular attention paid to yield control. This cuvée comes specifically from plots with clay and flint soils, giving the grapes a unique mineral identity. The harvest is carried out entirely by hand at optimal ripeness.

    The vintage

    2023 is recognised for providing favourable conditions for producing wines of great quality and expressiveness, allowing the berries to reach optimal phenolic ripeness.

    Winemaking and aging

    The winemaking of the Chinon "L'Huisserie" 2023 follows a traditional approach with minimal intervention. Fermentation takes place in concrete vats over three weeks to preserve the purity of the aromas. Aging is then divided into two phases: twelve months in oak barrels previously used for other wines, allowing for subtle integration, followed by an additional twelve months in concrete vats, ensuring the wine's freshness before bottling.
