    The colour reveals a pale yellow hue of medium intensity, adorned with subtle golden nuances.

    Nose
    With a lovely olfactory density, the nose reveals a delicate complexity blending floral and herbaceous aromas with subtle earthy touches. It also opens onto a generous fruity bouquet evoking citrus fruits such as lemon and lime, green pear, along with a light note of almond.

    Palate
    Elegant and endowed with a lovely richness, the palate offers a remarkable structure. The pronounced acidity is perfectly balanced by the richness of the fruit. The finish, with its lovely persistence, stands out for its refreshing mineral salinity.

    Food and wine pairing

    This white wine pairs beautifully with seafood and shellfish such as raw oysters, prawns, scallops or lobster. It also makes an ideal accompaniment to white fish roasted with butter and herbs, mussels in cream, as well as creamy cheeses such as Époisses or Taleggio.

    Service and storage

    This Bourgogne Côte d'Or Blanc 2023 has medium-term ageing potential. It can be enjoyed from around March 2026, but will continue to evolve favourably in bottle for several years.

    The Authentic and Mineral Expression of a White Wine from Domaine Pierre Morey

    The estate

    Established in the heart of Burgundy in Meursault, Domaine Pierre Morey was founded in 1793. A pioneer in its environmental approach, the estate converted to biodynamic farming as early as 1997. Today, the roughly ten-hectare vineyard is jointly managed by three generations: Pierre Morey, his daughter Anne Morey, and his grandson Jean-Victor Morey. Together, they carry on a historic family expertise, viewing the vine as a true living ecosystem, giving rise to wines renowned for their precision and their faithfulness to the terroir.

    The vineyard

    The Bourgogne Côte d'Or Blanc 2023 comes from a 1.76-hectare plot located in the commune of Meursault. Planted in 1984, these old vines flourish on deep soils composed of clay and limestone, rich in active calcium carbonate. The vineyard is entirely farmed according to the rigorous principles of biodynamic agriculture, without any synthetic pesticides or herbicides, thereby fostering microbial life in the soils through the use of natural compost.

    Winemaking and ageing

    The making of the Bourgogne Côte d'Or Blanc 2023 begins with entirely manual harvesting. After gentle pneumatic pressing, the musts undergo light settling before beginning a natural alcoholic fermentation in oak barrels, triggered exclusively by indigenous yeasts. The wine is then aged on fine lees for sixteen to twenty months, accompanied by regular stirring of the lees (bâtonnage) until winter, allowing the wine to develop its full aromatic complexity.
