    Tasting

    Colour
    The colour reveals a brilliant ruby hue with garnet highlights, offering beautiful luminosity and great elegance.

    Nose
    Complex and evolving, the nose opens with aromas of red and black fruits such as raspberry, cherry and blackberry. With aeration, it reveals subtle notes of undergrowth, mushrooms, dried flowers and liquorice, all underscored by perfectly integrated oak.

    Palate
    Silky and finely spiced, the palate presents a delicate tannic structure. The mid-palate, dominated by flavours of ripe red fruit, harmonises with a refined minerality, retaining lovely freshness and great vitality.

    Food and wine pairing

    This great red wine from France pairs wonderfully with roasted poultry such as chicken or duck, white meats like veal, as well as traditional slow-cooked dishes such as coq au vin. It also pairs very well with sautéed vegetables and mushrooms, or with matured cheeses such as tomme.

    Service and storage

    For optimal tasting, it is recommended to serve this wine at a temperature between 15 and 16°C, allowing it to breathe for around ten minutes beforehand. The Pernand-Vergelesses 1er Cru "En Caradeux" 2022 Domaine Poisot Père & Fils can be enjoyed from now, but it will reach its peak within 5 to 10 years and can continue to evolve in the cellar until approximately 2042.

    The estate

    Founded in 1902 following a family inheritance from the Louis Latour house, Domaine Poisot Père & Fils is a little-known estate located in Burgundy. Now run by Rémi Poisot, a former French Navy officer who returned to the land in 2010, the estate cultivates around two hectares of vines on prestigious terroirs. Faced with the economic challenges of succession, the family recently sold part of the land to the LVMH group, while retaining the farming rights. The estate thus continues to uphold its artisanal expertise and environmental commitment.

    The vineyard

    The Pernand-Vergelesses 1er Cru "En Caradeux" plot covers a modest area on the mid-slope, benefiting from an east and south-east exposure. The vines, with an average age of 45 years, thrive on a clay-limestone soil scattered with flint, giving the wine its mineral signature. Certified High Environmental Value (HVE) since 2019, the estate favours natural grass cover and meticulous manual work to preserve biodiversity and soil health.

    The vintage

    The year 2022 began with a harsh, rainy winter, followed by a spring with a gradual warm-up. The summer season stood out for its moderate heat, avoiding extreme heatwaves. These mild and balanced weather conditions allowed for slow, optimal ripening of the berries, favouring a perfect balance between sugar richness and the preservation of natural acidity.

    Winemaking and ageing

    The harvest is carried out by hand, with rigorous sorting both in the vineyard and at the winery. The berries are fully destemmed before undergoing around fifteen days of maceration in open wooden vats, punctuated by regular punching down and pumping over. Fermentation takes place using indigenous yeasts, with minimal intervention. The Pernand-Vergelesses 1er Cru "En Caradeux" 2022 Domaine Poisot Père & Fils then undergoes complete malolactic fermentation before ageing for 16 to 18 months in French oak barrels.
