    Tasting

    Colour
    The wine displays an intense black cherry red colour with violet hues at the rim, revealing excellent clarity and a brilliant sheen.

    Nose
    Deep and highly aromatic, the nose exudes aromas of ripe black fruit such as blackberry, plum and blackcurrant. It then opens onto balsamic nuances, fine spices such as clove and pepper, and elegant oak touches reminiscent of dark chocolate and roasted coffee, complemented by subtle floral and mineral notes.

    Palate
    Full-bodied and powerful, the palate offers remarkable volume supported by a dense yet perfectly silky tannic structure. Rich fruit, freshness from well-judged acidity and oaky notes come together in harmonious balance, leading to a very long, persistent finish.

    Food and wine pairing

    This red wine from Spain pairs beautifully with roast meats such as suckling lamb or suckling pig, grilled cuts of beef, slow-cooked stews and game in sauce. It is also a perfect match for aged sheep's milk cheeses and contemporary dishes featuring slow-cooked meats and mushrooms.

    Serving and cellaring

    To fully appreciate Malleolus 2023, decant it 30 to 60 minutes before tasting and serve at around 16°C in a Bordeaux-style glass. This wine has excellent ageing potential and can be enjoyed until around 2038.

    Emilio Moro unveils a full-bodied and elegant Ribera del Duero

    The estate

    Although the family's winegrowing history dates back to 1891, the Emilio Moro winery was officially founded in 1987. Located in Pesquera de Duero in Castile and León, the estate is now run by the third generation (Javier, Fabiola and Rubi), supported by the fourth. The estate covers 300 hectares of vines in Pesquera de Duero and 50 hectares in Bierzo. A pioneer in expressing terroir and in the use of an exclusive clone, the house also stands out for its strong environmental commitment, certified by international sustainability standards.

    The vineyard

    The grapes come mainly from the Camino Viejo plot, located in the heart of the Ribera del Duero appellation. This high-altitude terroir, rising to almost 900 metres, is characterised by a steep south-west-facing slope and poor, stony clay-limestone soils. The vines, aged between 25 and 75 years, are trained both as bush vines and on trellises, ensuring moderate yields and optimal concentration in the berries.

    The vintage

    The year began with a rainy winter that replenished the water reserves in the soil. Spring and early summer proved dry, with above-average temperatures for the season. Finally, abundant storms just before the harvest helped perfect the balance and ripeness of the grapes.

    Winemaking and ageing

    After a meticulous harvest by hand, the vinification of Malleolus 2023 begins with an extended maceration of two to four weeks and alcoholic fermentation in temperature-controlled stainless steel tanks. Malolactic fermentation also takes place in tank over approximately one month. This Spanish wine is then transferred to French oak barrels, mostly very new and sourced from the Allier forest, where it is aged for around 18 months.
