    Tasting

    Colour
    The colour reveals a deep ruby red hue with brick-red highlights.

    Nose
    Wonderfully complex, the bouquet exudes aromas of jammy black fruits (blackberry, black cherry, plum) and garrigue. The whole is underscored by spicy notes of black pepper, liquorice and gingerbread, alongside delicate woody touches.

    Palate
    The attack is powerful, revealing flavours of black fruits and dark chocolate, carried by a lovely mineral freshness. The tannins are elegant and silky. The mid-palate, full-bodied and concentrated, blends notes of vanilla and cedar with a saline edge, extending into a remarkably long finish.

    Food and wine pairing

    This Château La Sauvageonne "Grand Vin" pairs wonderfully with grilled meats, particularly beef, or game such as wild boar and venison. It also perfectly accompanies dishes in dark sauces flavoured with Mediterranean herbs, as well as full-flavoured aged cheeses.

    The estate

    Founded in 1992 by the former professional rugby player of the same name, Gérard Bertrand has become an essential reference in the Languedoc. Today, Gérard Bertrand still heads this vast estate, which stands out for its pioneering commitment to the environment. With an impressive vineyard cultivated according to the principles of biodynamics, the producer seeks to showcase the diversity of southern France's terroirs. Acquired in 2011, the La Sauvageonne estate perfectly embodies this philosophy of excellence and respect for nature.

    The vineyard

    Located within the Terrasses du Larzac appellation, the vineyard thrives at an altitude ranging between 150 and 350 metres. The vines draw their uniqueness from volcanic soils composed of red ruffe, sandstone, schist and clay. This terroir benefits from a contrasting climate, marked by very hot days and cool nights, favouring slow and optimal ripening of the berries. All the plots are farmed according to the principles of organic and biodynamic agriculture.

    Winemaking and aging

    The grapes are harvested by hand with extremely rigorous sorting to keep only the best fruit. Maceration lasts between twenty and twenty-five days to extract colour and aromas optimally. Each plot and each variety is vinified separately. This Château La Sauvageonne "Grand Vin" 2022 then undergoes ageing for twelve to sixteen months in new French oak barrels, followed by light fining prior to bottling.
