    Tasting

    Nose
    The aromatic bouquet reveals great intensity and fine complexity. It exudes deep aromas of red and black fruits, enhanced by spicy notes. The whole is harmoniously underlined by subtle, perfectly integrated oak.

    Palate
    The attack is seductive and rounded, revealing a balanced and elegant structure. The palate is supported by tannins that are both fine and tight-knit, offering remarkable freshness. The tasting concludes with a persistent and complex finish, reflecting the assertive character of this wine.

    Food and wine pairings
    This red wine pairs wonderfully with small game such as quail or venison served with a refined sauce. It will also enhance red meats or a veal chop served with mushrooms, particularly chanterelles. For cheeses, opt for blue-veined varieties.

    Serving and cellaring
    To fully appreciate II du Château Saint-Pierre 2025, serving at a temperature between 16 and 18 °C is recommended. Light decanting is advisable in its youth to reveal its full aromatic expression, while its structure promises harmonious ageing over the years.

    The elegance and complexity of a Pomerol second wine

    The estate
    Located on the prestigious Pomerol plateau, in the Bordeaux region, Château Saint-Pierre is an estate whose viticultural roots date back to the 17th century. The Pradel de Lavaux family acquired the property in 1920. Today, Axel Pradel de Lavaux leads the estate, representing the ninth generation of this winemaking lineage. Since 2014, he has modernised practices to elevate this label among the elite of the appellation, favouring a tailor-made approach that reveals the full elegance and complexity of this exceptional terroir.

    The vineyard
    The vines dedicated to this Second Wine extend at the heart of the Pomerol appellation. Averaging 20 years of age, the vineyard benefits from a planting density ranging from 6,000 to 7,500 vines per hectare. It thrives on a sandy-gravel terroir particularly rich in iron pan, typical of the region. Vineyard management is traditional and partially grass-covered, including meticulous work such as debudding and thinning. Rigorous plot selection is applied, followed by manual harvesting carried out on September 10 and 11.

    The vintage
    The year 2025 was characterised by contrasting climatic conditions, beginning with a rainy winter and a wet spring that helped build up good water reserves. The end of summer was then marked by exceptional sunshine and heatwave episodes. Thanks to sound agronomic choices and perfectly adapted vineyard management, water stress was kept under control. These efforts helped preserve the balance and freshness of the berries through to harvest.

    Winemaking and ageing
    Following meticulous sorting, the grapes begin fermentation in temperature-controlled stainless steel and concrete vats. Maceration lasts between two and three weeks to extract the material with precision. After run-off, the wine is immediately transferred into barrels. The ageing of II du Château Saint-Pierre 2025 then takes place over 15 months in oak barrels, with 20% new barrels and 80% one-wine barrels, ensuring subtle integration of the oak. Alcohol: 13.5% vol.
