Tasting
Colour
This luminous wine reveals a pale yellow hue verging on gold, enhanced by delicate green highlights.
Nose
Highly expressive, the nose releases aromas of white-fleshed fruit such as green apple and pear. It then opens onto subtle notes of white flowers, accompanied by a fine mineral touch reminiscent of flint and wet stone.
Palate
The attack is soft and silky, quickly balanced by a lovely vivacity. The palate charms with its tension and purity, stretching into a long, delicately saline finish.
Food and wine pairings
This white wine pairs wonderfully with delicate white fish, scallop carpaccio or a citrus ceviche. It will also be an excellent match for light poultry dishes, green asparagus risotto or fresh goat's cheeses.
Serving and cellaring
To fully appreciate this 2023 vintage, it is best served at a temperature of 10 to 12°C, after being opened around twenty minutes before tasting. This wine can be enjoyed now, but will continue to gain in complexity until around 2028.
The Elegance and Tension of a Beaujolais Chardonnay
The estate
Founded in the early 1980s in the hamlet of Le Clachet in Villié-Morgon, the domaine is a true benchmark both in France and in Beaujolais. Now run by Jean Foillard, supported by his wife Agnès and his son Alex, the estate covers some twenty hectares. An emblematic figure of the natural wine movement, Jean Foillard champions environmentally friendly viticulture without herbicides, along with minimal-intervention winemaking. Renowned for its Morgon reds, the domaine stands out for its constant quest for authenticity, producing cuvées of great purity that captivate wine lovers around the world.
The vineyard
This cuvée comes from a small plot of just over one hectare in the Pizay lieu-dit, planted with vines around fifteen years old. Here, the terroir of the Beaujolais Blanc appellation is characterised by the granite soils typical of the region, dotted with limestone outcrops that give the wine its tension. The vineyard is farmed under certified organic agriculture, with naturally moderate yields and mechanical soil cultivation to encourage microbial life.
The vintage
2023 stood out for its particularly balanced climate. These mild weather conditions allowed the grapes to reach full, optimal ripeness, ensuring a healthy, high-quality harvest.
Vinification and ageing
The grapes are harvested by hand and rigorously sorted. In the cellar, whole-bunch pressing preserves all of the wine's aromatic finesse. Fermentation takes place in vats, driven exclusively by indigenous yeasts. The wine is then aged mainly in stainless steel vats or neutral vessels, with no oak influence, in order to retain its freshness and minerality.
