    Colour
    This white wine reveals a pale yellow hue enhanced by silvery highlights, offering remarkable crystalline brilliance.

    Nose
    The aromatic bouquet opens with delicate floral notes reminiscent of acacia blossom, before revealing aromas of honey, citrus fruits and lemon. A typical minerality, evoking gunflint and wet stone, rounds out this complex ensemble.

    Palate
    The attack is lively and precise, characteristic of cool-climate terroirs. The mid-palate unfolds flavours of white fruits, such as peach and pear, supported by lovely tension and a saline minerality. The finish is long and lingering, carried by hints of citrus and white flowers.

    Food and Wine Pairing

    This wine pairs wonderfully with seafood, particularly oysters, or poached white fish accompanied by a light butter and citrus sauce. It also enhances aged goat cheeses, scallops, as well as dishes featuring spring vegetables such as asparagus.

    Service and Storage

    For optimal enjoyment, this Chablis 1er Cru "Vau de Vey" 2023 is best served at a temperature between 12 and 14°C. While it can be appreciated in its youth, it possesses a fine structure that allows it to age gracefully in the cellar, with a drinking window extending to around 2033.

    The Mineral Expression and Precision of a Great Chablis White Wine

    The Estate

    Founded in 1973 by Jean-Marc Brocard in the heart of Burgundy, more precisely in Préhy, the estate has established itself as a key reference within its appellation. Now run by his son, Julien Brocard, the estate represents the largest vineyard holding in the Chablis region, spanning 240 hectares of vines. Strongly committed to environmental stewardship, the estate stands out through its major shift towards organic and biodynamic farming, combining traditional methods with a modern ecological vision to fully express the authenticity of its terroirs.

    The Vineyard

    The "Vau de Vey" climat is a distinctive terroir of Chablis, located on the left bank of the Serein river. This vineyard is characterised by extremely steep slopes that require rigorous manual work. Facing south-east yet swept by northern winds, the vines develop in a cool microclimate. They draw their unique character from a typical Kimmeridgian subsoil, composed of marl and limestone rich in marine fossils, giving the wine its mineral signature.

    The Vintage

    The year 2023 began with episodes of spring frost that put the vineyard to the test. The season then continued with a hot, sunny summer, punctuated by a few periods of water stress. The highly favourable weather conditions at the end of September ultimately allowed the berries to reach optimal ripeness while preserving lovely freshness ahead of the harvest.

    Winemaking and Ageing

    The alcoholic fermentation of this Chablis 1er Cru "Vau de Vey" 2023 is carried out using indigenous yeasts, with strict temperature control maintained between 18 and 20°C. A complete malolactic fermentation then follows, softening the wine's structure. Ageing takes place over a period of fourteen months, exclusively in stainless steel tanks on fine lees, with no exposure to oak, in order to preserve the aromatic purity and freshness of the fruit.
