    Tasting

    Colour
    The glass reveals a deep ruby hue, with beautiful translucency and slight garnet reflections at the edges.

    Nose
    Initially reserved, the bouquet needs a little aeration to open up. It then reveals a palette dominated by small red fruits such as strawberry and raspberry, accompanied by cherry and a touch of blackcurrant. Mineral nuances of graphite and slate intertwine with floral notes, before evolving towards touches of spice, liquorice and subtle leather.

    Palate
    The palate offers a medium to full-bodied intensity, supported by a well-defined acidity that brings freshness. The tannins are fine and silky. Flavours of strawberry, cherry and blackcurrant linger at length, extending into a finish of beautiful persistence.

    Food and wine pairing

    This red wine pairs perfectly with feathered game such as duck à l'orange, quail or woodcock. It also wonderfully accompanies red meats in sauce, such as beef bourguignon, as well as lamb flavoured with rosemary. Dishes with wild mushrooms or characterful aged cheeses, such as Époisses, also make for very fine pairings.

    Service and storage

    It is recommended to decant this Mazis-Chambertin Grand Cru 2021 before serving to dissipate the slight natural carbon dioxide. For optimal storage, bottles should be laid down in a stable environment, away from light, with a temperature between 7 and 18°C and good humidity. This wine will reveal its full potential after a few years in the cellar and can be enjoyed at its best between approximately 2028 and 2043.

    The elegance and mineral structure of a Gevrey-Chambertin grand cru

    The estate

    Founded in 1999 by Mounir Saouma and Rotem Brakin, the house of Lucien Le Moine is established in Beaune, in the heart of Burgundy, France. This estate operates as a micro-négociant-éleveur with an artisanal approach. The current owners favour a philosophy of minimal intervention, meticulously selecting musts or wines from the finest terroirs to raise them with great technical precision, thereby revealing the purity of each Burgundian climat.

    The vineyard

    The Mazis-Chambertin appellation covers 8.73 hectares on the upper slopes of Gevrey-Chambertin, in the northernmost and coolest part of the Côte de Nuits. Facing southeast and northeast, the vines are rooted in very shallow soils, rich in crinoidal limestone and marine fossils, resting directly on the bedrock. This well-drained terroir forces the vines to draw deeply on their resources, favouring the concentration of the grapes.

    The vintage

    The year 2021 began with episodes of spring frost that naturally limited yields. The growing cycle then continued under moderate summer temperatures, without extreme heat. These climatic conditions allowed the berries to reach full phenolic maturity while preserving a lovely natural acidity, offering a classic and balanced profile.

    Winemaking and aging

    After the acquisition of the wines following primary fermentation, this Mazis-Chambertin Grand Cru 2021 is aged in custom-made oak barrels from the Jupilles forest, slowly toasted over embers. The wine rests on its fine lees for 18 to 20 months, without racking, with regular lees stirring. Malolactic fermentation is deliberately delayed until summer to preserve the protective carbon dioxide. Bottling is carried out by gravity, during a full moon.
