    Tasting

    Color
    The color reveals a deep gold hue with vibrant green highlights.

    On the palate, this wine seduces with its body and pronounced mineral structure. The taut finish reveals beautiful bitterness typical of Marsanne, bringing roundness and freshness to the whole.

    Food and wine pairings

    This Crozes-Hermitage blanc pairs perfectly with grilled cod served with a green pea cream and a smoked bacon emulsion. It also complements a Saint-Jacques carpaccio accented with lime or a Tournedos Rossini accompanied by roasted potatoes.

    The estate

    Created in 1808 in Tain-l'Hermitage in the Rhône Valley, the M. Chapoutier estate now spans several continents. Managed by Michel Chapoutier since the 1980s, with his daughter Mathilde serving as Commercial Director since 2017, this family house stands out for its full conversion to biodynamics and its Braille labels since 1996.

    The vineyard

    "Sicamor" draws its essence from a mosaic of exceptional terroirs of the Crozes-Hermitage appellation. Mainly located in the northern zone on steep, high-altitude slopes, they thrive on the Tournon granites and white loess, which impart tension and freshness to the wine. Complementary parcels on the Rhône's alluvial terraces enrich this blend of terroirs.

    Vinification and aging

    Hand-harvested at optimal maturity, the grapes are pressed whole before fermentation in 600-liter demi-muids with temperature control at 17°C. Indigenous yeasts drive the fermentation, accompanied by regular lees stirring. Aging takes place over 10 months in demi-muids, followed by 2 months in tanks to perfect the wine's balance.
