    Colour
    The colour reveals a pale to medium yellow hue.

    Nose
    Generous and vibrant, the bouquet immediately reveals a beautiful mineral freshness marked by aromas of crushed stone and sea spray. Subtle citrus notes intertwine with delicate floral touches.

    Palate
    The palate offers a fine structure and a lovely balance, underscored by a smooth texture. It unfolds flavours of white fruits such as apple, pear and peach, combined with citrusy nuances. A persistent mineral thread accompanies notes of chamomile and white chocolate through to a long, elegant finish.

    Food and Wine Pairing

    This white wine pairs perfectly with grilled sea bream, seafood such as oysters or scallops, as well as lean white fish. It also goes wonderfully with green vegetable dishes or fresh goat's cheese.

    Service and Storage

    The Saint-Aubin 1er Cru "En Montceau" 2023 can be enjoyed from 2025, but it will reveal its full potential over time and can be enjoyed until around 2035.

    The Estate

    Officially founded in 1979, Domaine Marc Colin et Fils is located in the heart of the Côte de Beaune, in Burgundy, France. Originally spanning six hectares, the estate now covers 11.5 hectares across prestigious appellations. Currently run by Caroline and Damien Colin, the family estate is renowned for its environmentally friendly approach and meticulous viticulture. Favouring an authentic expression of the terroirs and minimal-intervention winemaking, the estate has established itself as an essential reference for its highly precise white wines.

    The Vineyard

    This wine comes from the "En Montceau" lieu-dit, located on the steep slopes of the Saint-Aubin appellation. South-west facing, these Chardonnay vines, the oldest of which are between 60 and 75 years old, benefit from optimal sunshine exposure. They thrive on shallow, poor soils composed of white marl resting on a hard limestone bedrock, giving the wine its strong mineral identity. The vineyard is cultivated using sustainable methods, with regular soil tillage.

    The Vintage

    The year 2023 benefited from moderate rainfall throughout the growing season, combined with slightly less sunshine than in previous years. A decisive heat spike at the end of August and beginning of September allowed the berries to reach optimal ripeness while retaining a lovely freshness.

    Winemaking and Aging

    To craft this Saint-Aubin 1er Cru "En Montceau" 2023, the grapes are fully destemmed before gentle pneumatic pressing. Fermentation begins naturally through indigenous yeasts under controlled temperatures. The wine is then aged in French oak barrels for around ten months, with a very small proportion of new oak, before resting for a further six months in stainless steel tanks. Bottling takes place without filtration or fining.
