    Tasting

    Nose
    The aromatic bouquet reveals a lovely intensity carried by notes of orchard fruit, subtly enhanced by spicy touches and delicate aniseed scents.

    Palate
    The palate offers a texture that is both rich and full of freshness. The balance proves caressing and lively, perfectly integrating the acidity into a harmonious structure.

    Food and wine pairing

    This white wine pairs beautifully with a red tuna tartare with blood orange and mint, accompanied by sesame biscuits. It also enhances grilled prawns, delicate white fish such as sole or turbot, as well as Mediterranean recipes flavored with lemon and herbes de Provence.

    Service and storage

    The "Les Derniers Etats d'Âme" 2023 vintage can be enjoyed now and will continue to evolve favorably, reaching its peak between 2025 and 2027. It can be cellared until around 2031. For optimal tasting, it is recommended to serve this wine at a temperature of 11°C.

    The authentic expression of a singular Languedoc terroir by Mas Jullien

    The estate

    Founded in 1985 by Olivier Jullien, who remains its sole owner and director to this day, Mas Jullien is an emblematic estate located in Jonquières, in the Languedoc. This visionary winemaker played a major role in the region's qualitative revival. The vineyard, which now spans eighteen to twenty hectares, is cultivated according to strict biodynamic principles, although without official certification. The relentless pursuit of excellence and profound understanding of the terroirs make this estate an essential reference for lovers of authentic wines.

    The vineyard

    Produced under the IGP Pays de l'Hérault appellation, this wine comes from vines thriving on clay-limestone soils dotted with pebbles. This specific terroir favors a beautiful mineral expression as well as intense underground microbial life. The harvest is carried out exclusively by hand in order to pick the berries at their ideal stage of physiological ripeness.

    Winemaking and aging

    For the "Les Derniers Etats d'Âme" 2023 vintage, fermentation takes place in barrels and demi-muids, allowing the aromas to be extracted with great gentleness. Aging then continues for a year in demi-muids, followed by an additional maturation period in larger-volume foudres, giving the wine a perfectly controlled aromatic evolution.

    Grape varieties

    This wine is mainly composed of Grenache Blanc, complemented by Carignan Blanc, Roussanne, and Clairette.
