The estate
A former agent for the Champagne house Pommery, Pascal Jolivet founded his own estate in Sancerre in 1987. Since producing his first vintage in 1991, Pascal Jolivet has gradually expanded his estate and now tends 95 hectares of vineyards across Pouilly-Fumé, Touraine, Sancerre and Pouilly-sur-Loire.
The vineyard
Pascal Jolivet's Indigène is a Pouilly-Fumé wine from exceptional vineyards whose soils date back to the Ice Age. This wine expresses its terroir, its grape variety and its place of origin with purity and authenticity.
Winemaking and ageing
Natural fermentation with indigenous yeasts. This Pouilly-Fumé wine is aged on the lees for 12 months before being bottled without filtration.
