    Tasting

    Appearance
    This wine reveals a beautiful pale gold hue, illuminated by subtle green highlights that underline its remarkable freshness.

    Nose
    The aromatic bouquet is particularly expressive, harmoniously blending vibrant citrus scents, such as lime and pink grapefruit, with delicate floral notes reminiscent of linden and hawthorn. The whole is enhanced by a strikingly pronounced mineral and chalky imprint.

    Palate
    From the very first sip, the wine proves to be straightforward and lemon-driven. The mid-palate, both dense and complex, is supported by a vibrant and perfectly integrated acidity. Elegant and deep, the finish lingers at length on aromas of vineyard peach, lifted by a fine saline touch.

    Food and wine pairings
    This cuvée pairs wonderfully with seafood, whether shellfish, raw crustaceans such as oysters, or fish prepared in sauce. Its lively character also allows it to enhance lightly spiced Asian dishes, white poultry in cream sauce, as well as aged goat cheeses.

    Serving and cellaring
    To fully enjoy the complexity of this cuvée, it is recommended to serve it at a temperature of 10°C. Endowed with fine potential, this wine can patiently wait in the cellar and be enjoyed until around 2034.

    This white wine has an alcohol content of 12.5% and a pH of 3.1.

    The estate
    Officially founded in 1987, the Pascal Jolivet estate has become an emblematic figure of the Loire Valley. The estate extends over 120 hectares across prestigious appellations, complemented by 60 hectares located in Touraine. Today, Pascal Jolivet still runs the estate, supported by his son Clément Jolivet, who manages operational matters. Fully certified in organic farming, the estate combines time-honoured methods with a modern vision to produce authentic wines that faithfully reflect the richness of their terroirs.

    The vineyard
    Born from rigorous plot selection, this Les Caillottes cuvée comes from vines planted on south-facing slopes spread across three villages of the Sancerre appellation. The terroir is composed exclusively of limestone soils, and more particularly the famous Kimmeridgian caillottes. The estate places great importance on biodiversity, practising full grass cover, regular composting and entirely banning the use of herbicides.

    The vintage
    Weather conditions were marked by a generously sunny summer in 2023. The absence of excessive heat during this summer period allowed the berries to ripen optimally while preserving a perfect balance between acidity and alcohol.

    Winemaking and aging
    To craft this cuvée, the grapes are hand-harvested and then meticulously sorted upon arrival. The process follows a natural flow thanks to gravity-fed work. After gentle pressing, only the free-run juices and the heart of the press are retained. Fermentation takes place naturally with indigenous yeasts in temperature-controlled stainless steel tanks. Finally, the wine benefits from eight months of aging on fine lees.
