    Tasting

    Appearance

    The robe reveals a pale gold hue enhanced by bright reflections.

    Nose

    The bouquet opens with a delicate minerality before releasing subtle notes of honeyed flowers and yellow stone fruits.

    Palate

    The palate offers a beautifully balanced structure, combining mineral freshness with subtle hints of tropical fruits. The whole seduces with its complexity and its perfectly judged acidity.

    Food and wine pairings

    This white wine pairs wonderfully with seafood, white fish in butter such as halibut or sea bass, as well as roast chicken with lemon. It will also enhance a saffron risotto, vegetable tarts or dishes with mild Asian spices.

    Serving and cellaring

    For an optimal tasting experience, this wine should be served at a temperature between 12 and 14°C. For storage, favour a dark space with a temperature of 12 to 15°C and humidity above 70%.

    The estate

    Founded in 1834 by Antoine Jaboulet, the Paul Jaboulet-Aîné House is a historic institution of the Rhône Valley. Overseeing a vineyard of approximately 114 hectares spread across prestigious appellations, the estate was acquired in 2006 by the Frey family. Today, under the leadership of Delphine Frey and her father Jean-Jacques Frey, who have taken over from Caroline Frey, the property upholds a demanding philosophy. Fully certified in organic and biodynamic farming, the estate stands out for its deep commitment to preserving ecosystems and to the authentic expression of its terroirs.

    The vineyard

    Located in the commune of Gervans, this terroir occupies the highest-altitude sector of the Crozes-Hermitage appellation, behind the hill of Hermitage. The vines dedicated to white wines extend over nearly three hectares and benefit from a south to south-west exposure. They thrive on deep soils composed of white earth and loess. A true ecological sanctuary classified as an LPO refuge, this small valley preserves a rich biodiversity. The vineyard is managed according to the principles of biodynamics, incorporating climate adaptation techniques such as bridge weaving of the vines.

    Winemaking and ageing

    The harvest is carried out by hand with meticulous sorting in the plot into small crates. To avoid overly harsh extraction, whole clusters are gently pressed. After cold settling, fermentation takes place in French oak barrels, half-muids or concrete eggs. Ageing continues on fine lees in these same vessels. Notably, malolactic fermentation is not performed, a deliberate choice that preserves all the aromatic freshness and acidity of the wine.
