Tasting

Appearance
This wine reveals a deep robe with a beautiful intense ruby hue, sometimes displaying subtle garnet reflections.

Nose
The bouquet proves particularly elegant and refined. It releases superb aromas of red fruits, such as cherry and raspberry, harmoniously underlined by delicate toasted notes and subtle vanilla nuances brought by the ageing.

Palate
The attack reveals a fleshy and powerful substance. The palate offers a magnificent alliance between the natural richness of the fruit and the finesse characteristic of its terroir. The structure relies on tannins that are both dense and perfectly enveloped, leading to a finish of remarkable length.

Food and wine pairings
This cuvée will pair wonderfully with finely prepared meats, whether roasted or in sauce, such as beef, duck or fine cuts of game. It will also enhance a beef fillet stuffed with mushrooms served with truffle mash, as well as medium-bodied to full-bodied cheeses.

Serving and cellaring
To fully appreciate the Corton Grand cru "Clos des Maréchaudes" Dom. du Pavillon 2024, it is recommended to serve it at an ideal temperature between 16 and 17°C. Blessed with excellent potential, this wine can be cellared and enjoyed until around 2034, or even beyond for lovers of more evolved profiles.

The estate
Founded in 1831 in Monthélie, Albert Bichot is an emblematic figure of Burgundy. Now led by Albéric Bichot, representing the sixth generation, this independent family estate oversees a vast vineyard of more than 100 hectares spread across six domaines, from Chablis to Beaujolais. A pioneer in its environmental approach, the brand stands out through an ambitious conversion to organic viticulture. The Domaine du Pavillon, located in the Côte de Beaune, perfectly illustrates this expertise, encompassing prestigious terroirs and unique monopoles.

The vineyard
The vineyard of this Corton extends over a confidential area of 0.55 hectares. Located at the foot of the hill and partly on the slope, the vines benefit from an east / south-east exposure, making this climat one of the sunniest and earliest-ripening in the sector. Averaging 40 to 50 years old, the vines flourish on brown limestone soils resting on very clayey scree. Historically, this lieu-dit takes its name from the ancient marshes ("Maresche") drained in the 13th century. This walled clos is unique, uniting two levels of appellation within a single two-hectare estate.

Winemaking and ageing
The making of the Corton Grand cru "Clos des Maréchaudes" Dom. du Pavillon 2024 begins with manual harvesting followed by a rigorous sorting of the berries upon arrival at the winery. The fermentation maceration takes place in temperature-controlled wooden vats over a period of 18 to 21 days. The wine then benefits from a careful ageing in oak barrels for 16 to 18 months, with a proportion of new barrels between 35 and 45%, to underline the structure without masking the brilliance of the fruit.
