Description
Characteristics and tasting notes of the Corton Grand Cru "Clos des Fiètres" 2023 by Au Pied du Mont Chauve
Tasting
Appearance
Of beautiful intensity, the robe reveals a deep ruby hue, vibrant and bursting with youth.
Nose
Complex and nuanced, the bouquet reveals intense aromas of red fruits, dominated by morello cherry and kirsch, intertwined with delicate floral touches. With aeration, subtle notes of white pepper, spices, sandalwood and an elegant earthy minerality unfold.
Palate
The energetic attack gives way to a concentrated, juicy and deep palate, carried by flavours of cherry and red berries. The balance between power and elegance is remarkable, supported by tannins of great finesse and a subtle mineral framework. The finish stretches with exceptional persistence, unveiling spicy and vanilla notes.
Food and wine pairing
This red wine pairs wonderfully with characterful meats such as a rib steak, braised beef or venison. It will also sublimate mushroom-based dishes, such as a risotto or pasta with truffles, as well as feathered game like roast duck or pigeon. A well-aged hard cheese, such as an old Comté, will make an ideal accompaniment.
Serving and cellaring
To fully appreciate this Corton Grand Cru "Clos des Fiètres" 2023, it is recommended to serve it at a temperature of around 16°C, taking care to decant it about thirty minutes beforehand. While it can be approached in its youth, this wine crafted for ageing will reveal all its complexity after a few years in the cellar and can be enjoyed until around 2063.

The estate
The history of the Picard family in Burgundy began with the creation of the estate in 1951 by Louis Félix Picard in Chagny. Today, Francine Picard, representing the third generation, runs this 140-hectare vineyard. In the late 2000s, she created the Au Pied du Mont Chauve label to unify the family jewels located in the prestigious villages of Chassagne-Montrachet, Puligny-Montrachet and Saint-Aubin. Deeply committed to respecting the environment, the estate stands out for its biodynamic approach, producing haute couture wines that combine density, freshness and authentic expression of the terroir.
The vineyard
Located at the northern gateway of the Côte de Beaune, the "Clos des Fiètres" climat extends over a confidential plot of 0.36 hectare within the prestigious Corton appellation. Benefiting from an ideal south-east exposure, the vines flourish on mid-slope hillsides on clay-limestone soils rich in pebbles, naturally warm and well-drained. The vineyard is cultivated according to the principles of biodynamics, with the soil worked by horse to preserve the vitality of the earth and biodiversity, without any use of chemical herbicides. Some vines are over one hundred years old.
The vintage
The year 2023 began with a mild and dry winter, leading to an early budburst in late March. After a cool spring, June, warm and sunny, encouraged rapid flowering. Summer proved more capricious with a rainy and grey August, slowing down veraison. However, a spectacular heatwave from 20 August onwards accelerated the ripening of the berries. The harvest, carried out early in the morning to preserve freshness, required rigorous sorting to retain only the fruit of optimal quality.
Vinification and ageing
The grapes, hand-picked in small perforated crates, undergo a meticulous selection. For this Corton Grand Cru "Clos des Fiètres" 2023, the harvest is almost entirely destemmed. Fermentation takes place in temperature-controlled stainless steel vats, driven by indigenous yeasts, with gentle extraction to preserve the elegance of the fruit. 15 months of ageing (50% in new 350L barrels, 50% in 350L barrels of more than two wines) with 15% whole-bunch harvest.
Grape variety
100% pinot noir.
