Tasting notes
Colour
The colour reveals itself in light golden hues, traversed by a ribbon of fine, steady bubbles, the result of long maturation on the lees.
Nose
The nose opens with notes of white orchard fruits, apple and pear, accompanied by brioche touches and a hint of characteristic saline minerality.
Palate
The palate is dry and broad, carried by a generous texture and a well-balanced acidity. Toasty, lightly spiced notes enrich the mid-palate, delivering a savoury, energetic wine that extends into a saline, lingering finish.
Food and wine pairing
This Champagne pairs beautifully with white meats such as pork or veal, as well as game birds and seafood dishes. It also works very well as an aperitif, on its own or alongside briny bites.
Serving and cellaring
The Coffret Le Réserve & 2 Flûtes is best enjoyed at a temperature between 8 and 12°C, in the two Champagne flutes provided, which showcase the finesse of its effervescence. This Champagne can be kept for several years after purchase.
A Billecart-Salmon Champagne with brioche notes and saline minerality
The estate
Founded in 1818 in Mareuil-sur-Aÿ, the Champagne House of Billecart-Salmon has remained family-owned and largely independent since its creation by Nicolas François Billecart and Elisabeth Salmon. Today led by Mathieu Roland-Billecart, representing the seventh generation, the House retains majority family control, alongside the Frey group. Renowned for its viticultural precision and its airy, harmonious style, Billecart-Salmon also stands out for its commitment to sustainable viticulture.
The vineyard
The grapes for this cuvée come from the finest terroirs of the Marne, within the Champagne appellation, notably the Montagne de Reims, the Grande Vallée de la Marne, the Vallée de la Marne and the Coteaux Sud d'Épernay. Most of the supply is sourced close to the estate, which ensures consistency of style and precise control over the terroirs used. This gift set includes one bottle of Billecart-Salmon "Le Réserve", accompanied by 2 elegant flutes.
The blend
This Champagne is a blend made up, on average, of around fifteen harvests, with a proportion of reserve wines exceeding 50%. This approach brings continuity, complexity and depth to the style of the cuvée, smoothing out the variations specific to each vintage.
Vinification and ageing
The wines destined for the Le Réserve cuvée are predominantly vinified in tanks at low temperature, a method inherited from the quality revolution initiated by the House, which preserves freshness and aromatic purity. Ageing on the lees lasts an average of 50 months, contributing to the finesse of the bubbles and the richness of the pastry aromas.
Grape varieties
This cuvée is made from a three-way blend of Pinot Noir, Chardonnay and Meunier, the latter grape variety holding a slightly predominant place in the composition.
