Bruno Paillard Crafts a Delicate and Well-Balanced Champagne
The Estate
Founded in 1981 in Reims, the House of Bruno Paillard is a family-run, independent entity based in the Champagne region. Although the family has been rooted in the vineyards since 1704, it was Bruno Paillard who established this exacting house, renowned for its relentless pursuit of purity. Today, his daughter Alice Paillard leads the estate as Managing Director. The house distinguishes itself through rigorous technical choices, such as the exclusive use of the first pressing, extra-brut dosages, and extended ageing, resulting in wines of remarkable precision.
The Vineyard
The estate spans 25 hectares across 89 plots at the heart of Champagne. The vines, averaging 32 years of age, thrive across 19 different crus, several of which are classified as Grand Cru and Premier Cru, located in the Montagne de Reims, the Marne Valley, the Côte des Blancs, and Les Riceys. The vineyard is farmed under certified organic practices, favouring biodiversity, the absence of synthetic pesticides, and soil cultivation that allows the roots to draw the typical minerality from the chalky subsoils.
The Vintage
1995 is recognised as an outstanding year in the region. The climatic conditions allowed the grapes to reach high ripeness, giving this cuvée a truly beautiful structure.
Winemaking and Ageing
The production of the "Assemblage" 1995 cuvée follows strict principles. Only the cuvée, corresponding to the juice from the first pressing, is retained. Fermentation takes place in temperature-controlled stainless steel tanks as well as in small oak barrels, followed by natural malolactic fermentation. The wine then undergoes a particularly long ageing period on lees in bottle, well beyond legal requirements, before disgorgement, the date of which is always indicated on the back label.
Grape Varieties
This cuvée is a blend of Pinot Noir and Chardonnay.
