Characteristics and Tasting Tips for Diebolt-Vallois Blanc de Blancs
Tasting notes
Appearance
The Blanc de Blancs reveals a golden-yellow hue, enlivened by shimmering highlights. The effervescence is fine and lively, releasing delicate bubbles that immediately convey the vivacity of this cuvée.
Nose
The nose opens on a floral and fruity register, blending notes of citrus and fresh white fruit. This delicate aromatic palette reflects the purity of Chardonnay vinified without any oak influence.
Palate
The attack on the palate is pleasant, carried by a fine, delicate mousse that brings plenty of freshness. The white fruit and citrus aromas found on the nose return on the palate, supported by a balanced structure that extends into a lovely length.
Food and wine pairings
This Blanc de Blancs is ideally enjoyed as an aperitif or at the start of a meal, in the spirit of a cocktail or a summer lunch. Its freshness and finesse pair particularly well with light, briny or vegetal cuisine, such as white fish, seafood or dishes featuring crisp vegetables.
Serving and cellaring
The Blanc de Blancs is best enjoyed at a serving temperature of around 9°C in summer and 10 to 11°C in winter, in order to preserve the balance between freshness and aromatic expression.
A Lively, Refined Blanc de Blancs, Expressing the Chardonnay of the Côte des Blancs by Diebolt-Vallois
The estate
Founded in 1978 in Cramant, in the heart of the Côte des Blancs, Diebolt-Vallois was built around a family vineyard devoted to Chardonnay. Now run by the third generation, with Guillaume, Philippine and Ophélie working alongside Jacques Diebolt, the estate cultivates around eleven hectares spread across Cramant, Chouilly, Cuis and Épernay. Regarded as one of the most reliable names in the Côte des Blancs, Diebolt-Vallois draws on historic parcels, some planted as early as the 1950s, to craft Champagnes of great purity, regularly cited among the region's benchmarks.
The vineyard
The Blanc de Blancs sources its grapes from several emblematic terroirs of the Champagne appellation, across Cuis, Chouilly, Épernay and young vines in Cramant. These villages of the Côte des Blancs sit on chalky soils that encourage deep rooting of the vines and the characteristic mineral expression of Chardonnay. The young vines of Cramant bring tension and freshness, while Cuis, Chouilly and Épernay provide grapes that are both delicate and fully ripe, contributing to the balance of this cuvée.
The blend
This Blanc de Blancs is the result of a blend built across two harvest years, combining a wine from the current vintage with reserve wines. This method smooths out climatic variations from one harvest to the next and ensures a consistent style, while preserving the freshness and elegance that define this cuvée.
Vinification and ageing
The Blanc de Blancs is vinified in temperature-controlled tanks, a choice that preserves the full aromatic delicacy of Chardonnay. Malolactic fermentation is carried out, bringing roundness and harmony to the grape variety's natural acidity, while ageing continues in tank until the final blend. The dosage, between 3 and 5 grams per litre, gives this Champagne an Extra Brut profile that is lively and taut.
Grape variety
This Champagne is made from 100% Chardonnay, the emblematic grape variety of the Côte des Blancs, which gives it its tension, freshness and aromatic purity.
