Food and Wine Pairings
This Jacques Selosse V.O. is an excellent companion for noble fish such as turbot, sea bass or sole, particularly when served with a butter sauce or enlivened with citrus. It also pairs beautifully with shellfish such as lobster or langoustines, as well as with white meats and poultry served in a creamy mushroom sauce. Finally, it finds a particularly happy echo in long-aged, hard pressed cooked-curd cheeses, such as Comté.
A Grand Cru Blanc de Blancs from the Côte des Blancs by Jacques Selosse
The Estate
Founded in 1949 in Avize, in the heart of the Côte des Blancs in Champagne, Jacques Selosse is now run by Anselme Selosse and his son Guillaume Selosse. Renowned for its precise reading of the region's chalky terroirs and for winemaking methods that depart from traditional Champagne practice, the family estate has established itself as a benchmark among grower Champagnes, driven by a demanding approach to the vineyard and a deliberately limited production.
The Vineyard
This Grand Cru Blanc de Blancs draws its substance from the slopes of Avize, Cramant and Oger, villages classified as grand cru in the heart of the Côte des Blancs. These Champagne terroirs, marked by outcropping chalk, give Chardonnay a particularly pronounced tension and minerality.
The Blend
This Jacques Selosse V.O. is the result of a blend of three successive vintages of Chardonnay, sourced exclusively from the grand cru vineyards of Avize, Cramant and Oger. Before release, this Extra Brut benefits from extended cellar ageing, generally between five and six years, which allows it to develop its complexity.
Winemaking and Ageing
The creation of V.O. Version Originale Grand Cru Blanc de Blancs Extra Brut relies on a long period in the cellar before disgorgement, generally five to six years, which sets this cuvée apart from the Initial cuvée produced by the estate. The dosage, in the extra brut style, remains extremely low.
