Tasting

Colour
The colour reveals a brilliant pale gold hue with slightly golden highlights.

Nose
The aromatic bouquet opens with orchard fruit notes such as white peach and ripe pear, underscored by lemon zest. Delicate touches of acacia blossom and almond blend with a pronounced chalky minerality. On aeration, subtle nuances of spice and citrus blossom enrich the whole.

Palate
Boasting a lovely texture and medium body, the palate immediately unfolds flavours of apricot and peach. A fine chalky mineral tension brings remarkable balance, evolving towards notes of candied lemon. The finish stands out for its impressive length.

Food and wine pairing

This French white wine pairs beautifully with poultry in creamy sauces, delicate white fish such as turbot or sole, and shellfish. It also enhances soft-rind cheeses, mature goat's cheeses or an aged Comté, as well as sautéed mushrooms or asparagus.

Service and storage

The Viré-Clessé Village "Vieilles Vignes" 2023 offers remarkable ageing potential and can be cellared for optimal tasting between approximately 2025 and 2035.

The estate

Officially founded in 1945 by Roger Cordier, Domaine Cordier Père et Fils is an essential reference in Burgundy. Located in Fuissé, the estate underwent a genuine turning point in 1987 under the guidance of Christophe Cordier, the current owner. He put an end to selling grapes to merchants in order to take full control of production. Today, the estate spans approximately 35 hectares across more than 120 plots. Committed to an environmentally respectful approach, the vineyard is certified organic and follows biodynamic principles, revealing the full richness of its terroirs.

The vineyard

The grapes for this cuvée come from the Viré-Clessé appellation, from vines aged between 60 and 75 years. Growing on clay-limestone soils rich in chalk, the plots benefit from an ideal east and south-east exposure, at altitudes ranging from 200 to 440 metres. Vine management is meticulous, favouring manual work, horse ploughing to preserve the soils, and short Guyot pruning to limit yields and concentrate the aromas.

The vintage

The year 2023 presented some climatic challenges, but ultimately allowed for the harvest of berries offering a perfect balance between fine ripeness and preserved acidity, giving the wine freshness and brightness.

Winemaking and ageing

For the Viré-Clessé Village "Vieilles Vignes" 2023, whole bunches are gently pressed. The juices are transferred by gravity, without pumping, thanks to modern facilities. Fermentation takes place with indigenous yeasts. The wine then undergoes extended ageing on full lees for 12 to 18 months in neutral French oak barrels, foudres and wooden vats. Bottling is carried out by gravity, without fining and with very light filtration.
