The Precision and Minerality of a White Wine from the Hautes-Côtes de Nuits
The Estate
The modern history of Domaine des Perdrix truly began with its creation in 1996, when the Devillard family took over this estate located in Burgundy, in the heart of the Côte de Nuits. Now run by Bertrand Devillard and his children Amaury and Aurore, the estate is renowned for its exacting standards and pursuit of excellence. With a 12-hectare vineyard, more than half of which is classified Premier and Grand Cru, it notably holds the near-monopoly of the famous "Aux Perdrix" terroir. The estate is now recognised worldwide for the quality and precision of its wines.
The Vineyard
This Burgundy wine comes from a 0.45-hectare plot planted in 2009 on the heights of Premeaux-Prissey. Rising to between 300 and 400 metres in altitude, the vines benefit from an east-facing orientation, sheltering them from excessive afternoon heat. They thrive on clay-limestone soils where limestone predominates, giving the wine its characteristic minerality. The vineyard is farmed according to sustainable practices.
The Vintage
2022 was marked by warm weather conditions, which favoured slightly greater berry ripeness while preserving lovely natural acidity.
Winemaking and Aging
Following manual harvesting and rigorous sorting, the grapes undergo gentle pneumatic pressing. The must is then left to settle overnight in a cold environment. Both alcoholic and malolactic fermentation for this Bourgogne Hautes-Côtes de Nuits 2022 take place entirely in oak barrels. Ageing continues in barrel for eight months, before concluding with two months resting in stainless steel tanks prior to bottling.
