The Freshness and Minerality of a White Burgundy by Domaine des Perdrix
The Estate
Taken over in 1996 by the Devillard family, Domaine des Perdrix quickly established itself among the essential names in Burgundy. Located in Prémeaux-Prissey, at the heart of the prestigious Côte de Nuits, the estate spans 15 hectares. Now run by Amaury and Aurore Devillard, the estate stands out for its modern facilities and environmentally friendly viticulture. It is particularly renowned for owning almost the entirety of the Premier Cru "Aux Perdrix". Each cuvée authentically expresses the richness of these exceptional terroirs.
The Vineyard
This Burgundy wine comes from a small 0.45-hectare plot planted in 2009. The vineyard sits atop the Prémeaux-Prissey plateau, at an altitude ranging from 300 to 400 metres. Facing east, the vines thrive on clay-limestone soils where limestone predominates, giving the wine its distinctive tension and mineral signature. The harvest is carried out exclusively by hand to preserve the surrounding biodiversity.
The Vintage
The year 2023 began with a warm, dry winter, leading to a late budburst in early April that protected the vines from frost. Flowering was rapid and even. The summer saw a few localised storms, which helped maintain good vine health. The harvest period was marked by an extreme heatwave nearing 40°C, forcing the teams to pick very early in the morning. However, the altitude and exposure of the plateau helped protect the berries and ensure optimal ripening.
Winemaking and Aging
After careful sorting, the whole clusters destined for this Bourgogne Hautes-Côtes de Nuits 2023 undergo gentle pneumatic pressing. The must then rests statically in the cold for 24 hours for natural clarification. The juice is transferred by gravity into traditional barrels, where both alcoholic and malolactic fermentation take place in full. Aging continues in barrels with a balanced proportion of new oak, followed by light filtration prior to bottling.
