Tasting
Appearance
The robe reveals a bright, pale hue, enhanced by delicate white-gold highlights.
Nose
The aromatic bouquet elegantly blends notes of white fruits and citrus with subtle hints of toasted hazelnut and dried fruits, inherited from its ageing.
Palate
Warm and concentrated, the palate seduces with its breadth and tension. It reveals a strikingly chalky and saline minerality, stretching out at length towards a persistent, delicately lemony finish.
Food and wine pairings
This white wine pairs beautifully with fine fish (turbot, sole, sea bass) served with a beurre blanc sauce, or with shellfish such as scallops. It also elevates poultry in cream and mushroom sauce, as well as hard cooked-curd cheeses such as Comté or Beaufort.
Serving and cellaring
Endowed with a fine structure, this 2024 vintage has interesting cellaring potential, allowing it to develop all its aromatic complexity over the years spent in the cellar.

The estate
Founded between 1120 and 1130 by the Cistercian monks of the Abbey of La Ferté, Domaine du Cellier aux Moines is a historic estate located in Givry, in Burgundy. Acquired and passionately restored since 2004 by the Pascal family, the estate is now run by Catherine and Philippe Pascal, alongside their children. With a vineyard of around 10.5 hectares, this singular estate combines an exceptional monastic heritage with a modern scientific approach, standing out for its demanding viticulture, certified organic and biodynamic.
The vineyard
This cuvée comes from a micro-plot of 23 ares located in the northern sector of the Chassagne-Montrachet vineyard. South-east facing and set on a steep slope at an altitude ranging between 269 and 290 metres, the vines were planted in 1989. They thrive on shallow, very stony soils, composed of brown clay resting on a bedrock of hard oolitic limestone. The entire vineyard is cultivated according to biodynamic principles, encouraging a living soil and optimal ripening of the berries.
Vinification and ageing
The grapes are harvested by hand, followed by rigorous sorting in the vineyard and then at the winery. Vinification is deliberately low-intervention, using exclusively indigenous yeasts. The grapes are handled with great care thanks to a fully gravity-fed winery. Ageing is carried out combining a period in vats and in oak barrels, helping to preserve the freshness of the fruit while bringing a fine aromatic complexity.
