Tasting

Appearance
The wine reveals a deep ruby hue adorned with garnet nuances.

Nose
The aromatic bouquet opens on notes of small red fruits such as morello cherry and raspberry. It then evolves towards spicy touches of black pepper and smoke, along with aromas of undergrowth and violet.

Palate
The attack is fresh and gives way to a generous body with an opulent texture. The tannins are coated and integrated, leading to a persistent and pleasant finish.

Food and wine pairings

This red wine pairs ideally with duckling stuffed with morels, lamb curry, wild duck with grilled aubergines, or venison. It also beautifully accompanies mature cheeses such as Mont d'Or or Fourme d'Ambert.

Serving and cellaring

For optimal tasting, it is recommended to serve this wine at a temperature between 15 and 17°C. It can be enjoyed in its youth but will continue to develop in the cellar and can be drunk until around 2037.

A generous and delicate red wine from Burgundy

The estate

The history of Domaine du Château de Meursault began in the eleventh century with the founding of the Moulin Foulot fiefdom. Located in the heart of the Côte de Beaune in Burgundy, this estate spans 67 hectares. Today, the Halley family, notably Olivier Halley, oversees the management of the domaine. Certified organic, the estate stands out for its environmental commitment, illustrated by the planting of a riparian buffer to promote biodiversity. Its philosophy favours minimal intervention to let the terroir express itself.

The vineyard

The plot from which this wine is produced covers just 0.12 hectare within the Corton appellation, on the northern part of the Côte de Beaune. Situated mid-slope, the vines benefit from an ideal south-easterly exposure to capture morning light while avoiding the excessive heat of late afternoon. The soil consists of a brown clay-limestone mix scattered with gravel, providing excellent drainage and a structure well suited to vine growing.

The vintage

The year 2022 began with a mild and dry winter, followed by an early budbreak in April. The particularly warm spring, especially in May, encouraged a swift flowering. June brought abundant rainfall, allowing soil water reserves to be replenished. After véraison was completed in mid-August, high temperatures were maintained until the harvest, which began on 29 August under very favourable weather conditions.

Winemaking and aging

Following manual harvesting, the grapes undergo rigorous optical sorting before being destemmed. A cold pre-fermentation maceration is carried out for 15 to 18 days in temperature-controlled stainless steel vats. Alcoholic fermentation then lasts 5 to 6 days, punctuated by measured punch-downs and pump-overs. Aging takes place over 18 months in French oak barrels, split between 40% new barrels, 30% one-wine barrels and 30% two-wine barrels.
