To fully appreciate the Ladoix Village "Chaillot" 2023, it is recommended to serve it at a temperature between 15 and 16°C. This wine can be enjoyed in its youth, but it will reach its peak around 2026 and can be cellared until approximately 2030.

The Estate

The history of Domaine du Château de Meursault began in the 11th century in Burgundy, France. Today spanning 65 hectares in the heart of the Côte-de-Beaune, this exceptional vineyard is divided into more than 110 plots. Acquired in late 2012 by the Halley family, the estate is currently managed by Stéphane Follin-Arbelet. Under the leadership of its owners, Olivier Halley and his family, the property has undergone a spectacular revival, combining the preservation of its historic heritage with modernisation. Committed to a strong environmental approach, the entire vineyard has been certified organic since 2022.

The Vineyard

This wine comes from the "Chaillot" climat, a 2.80-hectare plot located within the Ladoix appellation, at the base of the slope. The vines benefit from an ideal east/south-east exposure, promoting optimal grape ripening. The terroir is characterised by clay-limestone soils rich in flint, giving the wine its typical minerality and finesse. Vine work here is meticulous and individualised, with each plot monitored by the same winegrower throughout the year.

The Vintage

2023 stands out as an exceptional year for the region. Particularly mild and favourable weather conditions throughout the growing cycle resulted in a remarkable harvest quality, yielding perfectly healthy and balanced grapes.

Winemaking and Aging

Following manual harvesting, the grapes of the Ladoix Village "Chaillot" 2023 undergo rigorous sorting, first by hand and then by optical sorting after destemming. A cold pre-fermentative maceration of 15 to 18 days precedes a short 5 to 6-day alcoholic fermentation, punctuated by gentle punching down and pumping over. Finally, the wine is aged on lees for 15 months in oak barrels, 33% of which are new, with the remainder being one- to two-wine barrels.
