Tasting

Colour
A beautiful pale gold hue, the wine reveals subtle yellow-green highlights.

Nose
The bouquet opens with floral notes of acacia and orange blossom, mingled with aromas of white pear, peach and citrus fruits. A pronounced minerality, evoking gunflint and chalk, is accompanied by delicate touches of roasted hazelnut and toasted sesame.

Palate
The attack is elegant and taut, carried by a lovely acidic backbone. The mid-palate unfolds a generous texture, perfectly balanced by an incisive minerality. The finish, remarkably long, lingers on saline, spicy notes and a vibrant freshness.

Food and wine pairing

This white wine pairs beautifully with fine fish such as grilled sole or roasted sea bass, as well as shellfish like lobster with butter. It also enhances scallops, Bresse poultry with cream and mushrooms, or a soft-ripened cheese such as Brillat-Savarin.

Service and storage

For optimal tasting, it is recommended to serve this Saint-Aubin 1er Cru "Les Murgers des Dents de Chien" 2020 at a temperature of 12°C, after airing or a light two-hour decanting. This wine can continue to age in the cellar and will keep developing favourably until at least 2040.

The mineral purity of a great white Burgundy

The estate

Founded in 1973 by Hubert Lamy, Domaine Hubert Lamy continues a long family lineage established in Saint-Aubin since 1640. Now run by Olivier Lamy and his wife Karine, the estate oversees a vineyard of 18.5 hectares spread across prestigious appellations of the Côte de Beaune, in Burgundy, France. Renowned for its respectful approach to the soil and its bold viticultural experimentation, the estate has established itself as a key reference, propelling the wines of its village to the pinnacle of the winemaking hierarchy.

The vineyard

The 0.23-hectare plot from which this wine originates sits at around 300 metres of altitude, making it the highest in the Saint-Aubin appellation. South-facing, just above the Grand Cru Chevalier-Montrachet, the vines, planted in 1985, thrive on an extremely limestone-rich and stony terroir. The thin layer of topsoil forces the root system to dig deep into the bedrock, giving the wine its characteristic tension. The name of the climat, in fact, refers to the dry-stone walls and the sharp limestone outcrops resembling canine teeth.

The vintage

The year began with a contrasting, rainy spring. At the end of August, welcome rainfall helped rehydrate the berries before intense heat arrived in September. The harvest, which began early on 5 September, brought in grapes in perfect health, combining optimal ripeness with well-preserved natural acidity.

Winemaking and aging

After manual harvesting and rigorous sorting, the grapes are gently pressed. Fermentation is triggered by indigenous yeasts. This Saint-Aubin 1er Cru "Les Murgers des Dents de Chien" 2020 is aged on fine lees for twenty-four months in large wooden vessels, with no new oak used this particular year in order to preserve freshness. The wine then rests for six months in tank before being fined with casein, lightly filtered and bottled according to the lunar calendar.
