Tasting
Nose
The nose reveals a beautiful aromatic complexity, blending scents of red and black fruits such as cherry and plum. These are joined by subtle floral notes reminiscent of peony, rose and violet, along with delicate spicy and mineral touches.
Palate
On the palate, this wine offers a fine balance between a firm structure and great freshness. The tannins are velvety, accompanying a generous fruity expression and a mineral tension characteristic of its terroir of origin.
Food and Wine Pairing
This wine pairs beautifully with game dishes such as venison, or poultry like duck and guinea fowl. It also goes wonderfully with red meats in sauce, mushroom-based recipes, delicate river fish, as well as characterful matured cheeses such as Époisses, Munster or Livarot.
Service and Storage
For optimal enjoyment, it is recommended to serve the Morey-Saint-Denis 2022 at a temperature of around 16°C. Although it can be enjoyed in its youth, this wine has excellent aging potential and can be cellared until around 2028, or even beyond.
Other Characteristics
This wine undergoes neither fining nor filtration before bottling, which preserves its full complexity and texture. A slight natural sediment may therefore form over time. Its well-balanced alcohol level reflects the fine ripeness of the grapes while retaining great finesse.

The Estate
Founded in 1872 by William Ponsot, Domaine Ponsot is a historic figure of Burgundy, located at the heart of the Côte de Nuits. Spanning eight hectares, this family estate stands out for its natural and sustainable approach to viticulture, forgoing certifications in favor of authentic, artisanal farming. Now led by Rose-Marie Ponsot, supported by technical director Alexandre Abel, the estate continues a philosophy of minimal intervention. Domaine Ponsot is renowned worldwide for its ability to express the quintessence of its terroirs with remarkable consistency.
The Vineyard
The plots dedicated to this wine are located on the upper slopes of Morey-Saint-Denis, bordering the forest. This unusual geographical position, combined with soils composed of Bajocian and Bathonian limestone, gives the microclimate a distinctive freshness. The altitude naturally limits yields while preserving the acidity of the grapes. The vineyard is farmed without any herbicides, favoring meticulous manual work and the maintenance of traditional terraces to preserve soil vitality and local biodiversity.
The Vintage
The year 2022 benefited from very favorable climatic conditions, offering an ideal balance between freshness and ripeness. The weather allowed for optimal phenolic ripeness while retaining lovely natural acidity. In response to shifting climate patterns, the harvest was carried out slightly earlier to preserve the structural precision and vibrancy that characterize this vintage.
Winemaking and Aging
The grapes for the Morey-Saint-Denis 2022 are hand-harvested in small wicker baskets, then rigorously sorted. Fermentation takes place using indigenous yeasts in traditional wooden conical vats. Punching down and pumping over are carried out for about three weeks. Aging then takes place over a period of sixteen to twenty-four months in old French oak barrels averaging more than fifteen years of age. No racking is carried out during this stage, allowing the wine to slowly refine on its lees before bottling.
