Appearance
Remarkably limpid, this white wine reveals a yellow hue ranging from pale to medium, adorned with greenish reflections in its youth.
Nose
The aromatic bouquet opens with scents of white-fleshed fruits, such as pear and apple, mingled with citrus notes and delicate floral touches of hawthorn. The whole is underpinned by a minerality evoking wet stone, along with subtle woody nuances of vanilla and fresh hazelnut.
Palate
The attack is remarkably precise, guided by a beautiful acidic freshness. The mid-palate reveals a silky, ample texture, without any heaviness, unveiling flavours of fruit, fresh butter and almond. The finish stretches out at length on a saline minerality and a noble hint of bitterness.
Food and wine pairings
This wine pairs wonderfully with fine shellfish such as lobster or langoustines, as well as with sea fish such as turbot or sea bass. It also accompanies very well poultry with cream and mushroom sauces, hard cooked-curd cheeses such as an aged Comté, or Asian-inspired dishes such as sushi and sashimi.
Serving and cellaring

The estate
Founded in the late 1920s by Pierre Ramonet, Domaine Ramonet has established itself as an essential benchmark in Burgundy. Located in the heart of Chassagne-Montrachet, the estate extends over nearly 20 hectares. Today, the domaine is run by the founder's grandsons, Noël and Jean-Claude Ramonet, now supported by Anne-France and Clarisse. Certified High Environmental Value, the estate perpetuates a demanding and understated philosophy, producing white wines of remarkable purity and longevity, highly prized by enthusiasts around the world.
The vineyard
The "Les Enseignères" climat benefits from a privileged geographical location within the Puligny-Montrachet appellation, situated just below the illustrious grands crus of the hillside. The vines thrive on a moderate slope offering excellent exposure, rooted in limestone and marl soils. The estate practises sustainable viticulture, favouring meticulous soil work to encourage deep rooting and preserve the health of the plant in the face of climatic hazards.
The vintage
The year 2022 was marked by generally hot and dry weather, punctuated by episodes of intense summer heat. Thanks to the soils' water reserves and adapted viticultural management, the vines were able to withstand these conditions. Harvests carried out at the opportune moment made it possible to preserve a beautiful freshness, yielding berries with generous and optimal ripeness.
Winemaking and aging
The grapes destined for the Puligny-Montrachet Village "Les Enseignères" 2022 are hand-picked and undergo rigorous selection. After a gentle pressing, the clear juices ferment under strict temperature control. The wine then benefits from patient aging in oak barrels, with a moderate proportion of new wood, spanning a period of 12 to 18 months in order to refine its structure while preserving the brilliance of the fruit.
