Tasting notes
Colour
Red in colour, with a brilliant ruby hue and delicate transparency.
Nose
The aromatic bouquet opens with notes of ripe cherry and redcurrant, accompanied by subtle spicy touches and a minerality reminiscent of wet stone. Nuances of black berries, brambles and light herbaceous notes add further complexity.
Palate
The attack is vibrant, carried by lovely freshness. The mid-palate, of medium body, reveals layers of red and black fruit. Fine tannins provide structure without any astringency. A persistent mineral thread leads to a saline, long and elegant finish, marked by subtle spicy notes.
Food and wine pairing
This wine pairs wonderfully with roasted white meats such as chicken, veal or herb-crusted pork fillet. It also enhances mushroom-based dishes, refined vegetarian cuisine, as well as traditional recipes such as coq au vin or lamb. As for cheese, favour semi-matured varieties with earthy notes.
Service and storage
This 2023 Marsannay can be enjoyed in its youth for its freshness, but also has a fine structure allowing it to evolve favourably over the years in the cellar.

The estate
Founded in 1999 with just one hectare of vines, Domaine Sylvain Pataille has become a key reference in Burgundy. Located to the north of the Côte d'Or, the estate now spans approximately fifteen to seventeen hectares. Sylvain Pataille, still at the helm of the domaine as its current owner, has been supported since 2008 by his brother Laurent. A pioneer of organic and biodynamic viticulture in the region, the domaine stands out for its respectful approach to terroir and its minimal-intervention winemaking, elevating its cuvées to the pinnacle of their appellation.
The vineyard
The vines for this Marsannay flourish on slopes facing east and southeast, at altitudes ranging between 255 and 390 metres. The terroir rests on a geological base from the Middle Jurassic, composed of hard limestone, notably Comblanchien limestone. The soils vary between calcareous brown earth at the top of the slopes and clay-rich silt mixed with alluvial pebbles further down. The vineyard, with some vines aged between fifty and seventy years, is cultivated according to organic and biodynamic principles, with soil work carried out using horses to preserve microbial life.
The vintage
2023 began with a mild winter followed by a rainy spring, which encouraged strong fungal pressure. The summer was then marked by heatwaves in July and August, causing water stress on the shallow soils, partially offset by some rain in September. Harvest took place under dry conditions from late August to mid-September. Despite yields slightly below average, this vintage produced concentrated berries, resulting in wines rich in polyphenols with lovely acidity.
Winemaking and aging
The grapes for this 2023 Marsannay are hand-harvested and rigorously sorted. Winemaking favours minimal intervention, with very slow pressing in an old vertical press and spontaneous fermentation using indigenous yeasts, without strict temperature control. A moderate proportion of whole bunches was retained for this vintage. Aging takes place over a period of fifteen to eighteen months in wooden vessels, combining barrels aged two to ten years with old demi-muids, with new oak not exceeding 20 to 30%. The wine is neither fined nor heavily filtered before bottling.
