The bouquet opens with restraint on an elegant minerality, evoking flint and oyster shell. With aeration, it releases subtle citrus aromas such as grapefruit and lemon zest, rounded out by gentle touches of white flowers and dried fruit.
Palate
The palate offers a remarkable balance between a round texture and a vibrant acidic backbone. Citrus flavours and stone fruit unfold with finesse, supported by a firm structure. The finish, with lovely persistence, lingers on chalky, saline notes typical of its appellation.

The Estate
Founded in 1923 by a group of visionary winegrowers, La Chablisienne is a landmark institution in Burgundy. Located in the heart of the Yonne, this cooperative winery today brings together more than 250 partner growers overseeing a vast vineyard covering 1,250 hectares. Currently led by Damien Leclerc, with Estelle Roy as cellar master, the estate stands out for its unique approach: receiving the must rather than the grapes, ensuring optimal quality control. Renowned worldwide for its technical excellence, it produces wines that faithfully reflect the purity of their terroirs.
The Vineyard
The climat "Les Preuses" spans approximately 10.8 hectares at the top of the hill of Chablis Grand Crus. Benefiting from an excellent south and south-west exposure, the vines enjoy optimal sunlight. They are rooted in brown clay-limestone soils resting on the famous Kimmeridgian bedrock, an ancient geological formation rich in oyster fossils that gives the wine its unique mineral signature.
The Vintage
The year began with episodes of spring frost that fortunately spared the buds. A particularly warm spring then encouraged rapid vegetative growth and early flowering. The summer season was marked by significant drought, ensuring excellent vine health. In mid-August, welcome rains allowed the grapes to reach a perfect balance between sugar concentration and acidity ahead of the harvest, which took place under favourable conditions in early September.
Winemaking and Aging
The making of the Chablis Grand Cru "Les Preuses" 2022 favours minimal intervention to preserve the identity of the terroir. After a long, gentle pressing, the must undergoes cold settling for around twenty hours. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, using indigenous yeasts. The wine then undergoes malolactic fermentation and benefits from extended aging on fine lees until mid-April, followed by light fining and filtration before bottling. The use of oak is entirely excluded.
