Description
Characteristics and tasting tips for Les Sauvagères 2025 from Paul Jaboulet-Aîné
Tasting
Appearance
The colour is a luminous gold with shimmering highlights that hint at the richness of the wine.
Nose
The nose unfolds with subtlety, with floral and lightly brioche-like aromas, accented by hints of hazelnut and a mineral touch reminiscent of the terroir's limestone origins.
Palate
The palate captivates with a carefully poised balance between lively acidity and delicate bitterness, extended by fine citrus notes and a sense of mineral freshness that carries the finish.
Food and wine pairing
This wine pairs beautifully with fish and shellfish, as well as poultry, mushrooms and goat's cheese, offering a wide range of possibilities at the table, from aperitif to main course.
Serving and cellaring
Les Sauvagères 2025 is best served between 10 and 12°C to preserve its freshness and mineral tension. It can be enjoyed upon release, but it also has excellent ageing potential and should develop favourably until around 2029.

The estate
Founded in 1834 in Tain-l'Hermitage, in the Rhône Valley, the House of Paul Jaboulet-Aîné is among the historic references of the Northern Rhône. Since 2006, it has been owned by the Frey family through Compagnie Financière Frey, which has steered the estate towards organic farming and then full biodynamics. Its current leadership combines Delphine Frey, in charge of strategic direction, with Chiara Pepe, who oversees technical matters, continuing the legacy of quality and environmental commitment begun by Caroline Frey.
The vineyard
The vines of Les Sauvagères are planted in Saint-Péray, on steep slopes dominated by limestone soils, a distinctive feature on the right bank of the Northern Rhône. Marsanne grows here almost in a wild state, hence the name of the cuvée. Aged between 10 and 20 years, the vines are trained in gobelet on stakes and in Royat cordon, and are farmed organically and biodynamically, with controlled yields of around 40 hl/ha.
Winemaking and ageing
For Les Sauvagères 2025, the hand-harvested grapes, sorted by plot, are whole-bunch pressed, then the must is left to settle naturally in the cold. Fermentation takes place over about ten days, followed by ageing of around nine months divided between French oak barrels, a portion of which are new, stainless steel tanks and a concrete egg, resulting in aromatic complexity with great finesse.
Grape varieties
This cuvée is a blend of 80% Marsanne and 20% Roussanne.
