Tasting notes

Colour
The colour reveals a golden hue, ranging from pale to medium.

Nose
The aromatic bouquet opens with notes of stone fruit such as white peach and pear, underscored by delicate touches of citrus. Floral scents of hawthorn and honeysuckle intertwine with a pronounced saline, chalky minerality.

Palate
Medium-bodied, the palate offers a rich texture balanced by lovely freshness. The fruity flavours unfold with elegance, accompanied by nuances of almond and a hint of salinity, leading into a persistent, energetic finish.

Food and wine pairing
This white wine pairs beautifully with grilled fine fish such as turbot or sea bass, as well as with seafood like pan-seared scallops. It also perfectly complements poultry in a creamy mushroom sauce, or soft-ripened cheeses such as Brillat-Savarin or a mature Comté.

Service and storage
This wine benefits from a little aeration before serving to reveal its full complexity. It can be enjoyed now but will continue to evolve favourably until around 2031.

The precision and mineral expression of a great white wine

The estate
Founded in 2016, the Pierre Girardin estate quickly established itself as a key reference. Located at the heart of the Meursault appellation, this family-run property brilliantly embodies the renewal of great Burgundy wines. Representing the thirteenth generation of his family, Pierre-Vincent Girardin vinified his first vintage at a very young age, drawing on a legacy of exceptional plots preserved by his father. Now at the helm of the estate, he pursues a modern, minimal-intervention approach. Equipped with a state-of-the-art winery since 2019, the estate stands out for its absolute pursuit of terroir purity.

The vineyard
The vines are currently transitioning to organic and biodynamic farming. Vineyard management focuses on deep soil work to encourage root growth, alongside rigorous canopy management. The harvest is carried out entirely by hand, ensuring a meticulous selection of berries.

The vintage
2023 benefited from particularly favourable climatic conditions. A promising spring was followed by a generously sunny summer, tempered by cool nights. These ideal conditions allowed the harvest to be completed successfully in early September, resulting in optimal ripeness.

Winemaking and aging
This cuvée is crafted through slow, pneumatic whole-bunch pressing, followed by fermentation triggered exclusively by indigenous yeasts. Aging takes place in custom-made 456-litre barrels, limiting the impact of new oak to around 50%, in order to preserve the authenticity of the fruit.
